Hello I have a doubt. As the mousse is frozen will it not disturb the shape of the mousse at all? And how can i transfer my cheesecake from my springfoam mould. It is so intimidating that cheesecake always breaks when i transfer. Please help
nice video, but I have a question. The mousse recipe I want to make, calls for gelatin. Isn't freezing gelatin bad? I though glatin breaks apart if you freeze it and then thaw it.
I am concerned about two or three different kinds of mouse cakes. Wont the sides spoil? One colour is understandable, but how would doing this affect the other layers and will it look as beautiful, not messy?
You used a ring without a bottom and then you added a bottom smaller in diameter than the ring itself. Then you poured the chocolate mousse inside. How can this be done since it will obviously leak? Thank you!
The consistency of mousse will not leak. If I am using a liquid mousse I leave it in the bowl to set up a little bit before placing it in the ring. But you must make sure your tray is flat. 😊
@@KirstenTibballs Thank you for your reply! I am sorry but I may not have expressed myself well. There is a ring placed on a counter top. The ring is hollow. Then you add a small bottom that leaves 1 inch uncovered around the ring. How can you even lift the hollow ring when it is obvious that the bottom is not held onto it? Is the ring sitting on a tray? In your video, it appears that the ring is only sitting on the counter top. Thank you!
The ring should be placed on a firm flat tray. The cake is then frozen. You remove the ring and place it on your serving plate while frozen and defrost it for a few hours in the fridge.
@@KirstenTibballs Thank you for taking the time to reply to my message! The video did not show nor indicate that the ring was placed on a tray. It appears that it is only placed on the counter top which makes it a bit unbelievable. I now understand.
The mousse is so liquid, it holds nicely when it is frozen, but what happens if you glaze it with mirror glaze and it starts to melt? Will the mirror glaze hold it together?
Great question. If you have questions not related to the video. You can go to my Facebook community group for Savour Online classes. You have to be a member of Savour Online classes which you can find by going to my website :) Thanks for the comment ! www.savourschool.com.au/

no that will be fine as you will have other settings agents
Hello my dear chef how long it takes for the mousse cake to be frozen in blast chill ????? Thank you

Could u use a regular home freezer to free the mousse, or u need a special freezer for this? What temp is mousse frozen in?
After freezing and taking off the plastic ring, can the frozen cake served immediately, or does it need to thaw before serving?
It needs to thaw prior to serving. I usually thaw it in the fridge for a few hours 😊
Kirsten Tibballs how long would it take to defrost a cake of that thickness / volume for serving ?
Could you give the recipe of the mousse cake, i need a recipe it can be freezeable
