    ingredients:
    vanilla sponge cake: 6 inch pan
    30ml unsalted butter or vegetable oil
    50g sugar
    2 Egg yolks
    1/2tsp vanilla
    pinch of salt
    50g plain flour
    1tsp baking powder
    2 Egg whites
    Direction:
    Beat the egg whites and make meringue
    Add egg yolks sugar oil vanilla essence and mix well
    Now sift the flour and baking powder and pinch of salt in egg yolk mixture and mix well
    Gently fold the meringue in flour mixture
    Grease 7 inch pan with oil or butter and line with baking paper
    Pour the batter in pan and
    bake 180c for 20 minute
    Mango puree:
    Peel and Cut the Mangoes in Slices and Blend in blender add water if needed.
    Mango compote: 6 inch ring
    5g unflavoured gelatine
    35ml water
    200g mango puree
    30g sugar
    5g cornstarch
    Direction:
    Mix 5g unflavoured gelatine with 35ml cold water and let it bloom for 5-10 mins
    Add mango puree sugar and cornflour in a pan and cook for few mins
    Now add the bloomed gelatine and mix well
    Pour in 6 inch ring and keep in freezer for 1 hour.
    Creamy Moussse:
    10g unflavoured gelatine
    60ml milk
    120g white chocolate
    1/2cup hot milk
    300ml cream
    200g cream cheese
    30g sugar
    1tsp vanilla
    Direction:
    Mix gelatine with 60ml cold milk and let it bloom for 5-10 mins
    Pour hot milk over white chocolate and let it melt completely and set aside
    Beat the cream until normal peaks
    Add cream cheese sugar vanilla and beat until well combined
    Add the cream and white chocolate and mix well
    Microwave bloomed gelatine or warm it on bain marie
    And add in mousse
    Mix well
    pour 1 cup of creamy mousse in 6 inch ring on top of mango compote
    Freeze 30 mins
    Mango Mousse:
    remaining creamy mousse
    150g mango puree
    Direction:
    Add mango puree in remaining creamy mousse
    Note: Add more bloomed gelatine if needed
    Pour mango mousse layer the chilled compote and creamy mousse, pour mango mousse and put the cake on top and freeze for few hours.
    Mirror Glaze:
    13g unflavoured gelatine
    1/4cup cold water
    150g sugar
    1/3cup water
    150g glucose syrup
    100g condensed milk
    150g white chocolate
    yellow gel food colouring
    Direction:
    Mix gelatine with cold water and let it bloom for 5-10 mins
    Add water, sugar, glucose syrup and condensed milk in a pan and simmer on low flame for few mins until sugar dissolves.
    Add gelatine and white chocolate and mix well.
    Add gel food colouring.
    Strain the glaze
    Cover with cling film make sure it is touching the top of glaze to avoid skin to form.
    Cool it down to 30-35c and pour on chilled cake.

      Hi thanks for watching
      Wait until the glaze completely stops dripping. To remove any glaze hanging down off the side of the cake, run a knife across the dangling glaze so that it sticks to the knife and gently twirl the knife to remove. Carefully pick up the cake up by using both palms Or 2 spatulas reaching under the cake. Place the cake on a serving plate. Hope it helps 😊

    Do you divide the mango puree to have 150g leftover? How much do you pour into the 6 inch ring?

      Hi Yes I Added 150g in creamy mousse.
      Pour 1 cup of creamy mousse in 6 inch ring.

      Hi dear sorry I haven’t tried pectin in mousse but you can substitute gelatine with Agar agar powder

      Hi ofcourse you can make without cream cheese. Make custard with egg yolks sugar vanilla bean and milk and mix with whipped cream add white chocolate if you like it
      1 egg yolk
      20g sugar
      1/2 cup (120ml ) milk
      Vanilla bean
      Would be enough for this recipe
      Boil milk with vanilla beans, Mix egg yolk with sugar pour hot milk over egg yolk keep mixing and cook until it thickens

    There were gelatin bubbles or clumps in my white chocolate + whipped cream + cream cheese mix. How to get rid of that

      Hi Unfortunately you can not fix it because to get rid of the lumps you would have to heat the mousse and that would destroy the texture.
      You might have to do it again.
      To avoid lumps dissolve the gelatin in cold water and let it bloom properly, then microwave for few seconds then add 2-3 tablespoons of the mousse, stir and then carefully add the gelatin to the rest of the ingredients while whisiking continuously.

      in the fridge after you put the glaze on and take it out at room temp for 2 hours before eating it so that it won't be still freezed

      Hi before glazing the cake should be frozen but after that there is no need to put back in freezer just store it covered in refrigerator it will be fine for a couple of days

      Hi you can safely store the leftover glaze in an airtight container( cover glaze with cling wrap, ensuring the cling wrap is touching the surface of the glaze to avoid skin to form) or zip lock bags & refrigerate.When ready to use again reheat the mirror glaze to 94°F (34°C), which you can either do over the stove or in the microwave. Since mirror glaze does not conduct heat well, you must break up the gel chunks as much as possible and keep it stirring in motion.Use a blender to process the glaze until smooth.

      Hi Peel and Cut Fresh Mangoes in Slices and Blend in blender add water if needed. As it was not mango season i have used mango pulp from a tin.

      @@HaniasKitchen I did try out this recipe and it was perfect in taste I would say it was very yummy and something I have never had before. The only concern was as soon as I got this entrémet out of fridge for clicking picture, the glaze started melting. Want to know the reason n how can I stabilize it. Thanks in advance

      Anisha Lokegaonkar thanks for watching my video and I am so glad that you liked it.
      Either glaze was too hot before pouring or cake was not cold enough. The temperature of glaze is soo important it should not be too hot or too cold. Cool it down to 35c or 95f. I suggest using a candy thermometer for glaze recipe and freeze your cake before pouring the glaze. Also make sure the glaze is not too thin add a little more gelatine ( not too much )it will stabilize it.

      hey the glaze will set they don't harden. Refrigeration is not necessary if you are eating it same day

      Khalida Shafira it’s probably Silikomarts mold, an Italian brand. You can find it online. Otherwise just look for silicone cake mold and you should find molds alike 😊

    The mango compote: you assigned a 6" cake pan but you had some kind of collar within the cake pan to pour the compote. That's not in the instructions.

      Hi the collar is 6 inch cake pan was a little wider from top that's why I put collar if you have cake rings than 6 inch is fine without collar thanks
