  • This a an easy, healthy egg muffin recipe. A delicious breakfast, or a great brunch idea.
    Ingredients
    12 eggs
    2 roma tomatoes
    1 green pepper
    fresh spinach
    1 tsp pink himalayan sea salt
    1 tsp black pepper
    1 tbsp Italian seasoning
    olive oil
    1/4 cup grated parmesan cheese
    Step 1
    Preheat the oven to 350 degrees
    Step 2
    Finely chop the tomatoes and green pepper, and set aside.
    Step 3
    In a medium bowl add the eggs and beat well, add the parmesan
    cheese, salt, Italian seasoning, and pepper, and beat well.
    Step 4
    Spray the muffin pans, line the cups with some of the spinach,
    add the egg mixture, then top with the peppers and tomatoes.
    Step 5
    Bake foe 25 to 30 minutes on 350 degrees.
