How to make egg muffins. Great for breakfast, lunch, picnics or when you fancy something tasty!
Simple and quick to prepare. Very easy to follow video recipe showing you simple step by step instructions throughout. All the ingredients are shown at the beginning but you can alter the recipe to suit your taste or to use up those leftovers.

That looks great! I love egg muffin frittatas. I've made them in various ways, with broccoli, diced peppers, various meats, etc...
However, my favorite is just eggs, shredded cheddar cheese, and seasonings. Quick and easy.
One thing to consider is to use silicone muffin "tins". They don't need any butter, oil, etc. They are naturally non-stick.
I really like them. The "muffins" pop out easily, and cleanup is a breeze.
Definitely going to make these tomorrow morning. Snow is coming and going to need a quick breakfast before starting my day filled with shoveling! Thanks a bunch for sharing!!

You can actually put the cheese in the bottom, and it will make a firmer bottom for each egg muffin, and have both crispy and creamy textures in your mouth!

I discovered these by accident a few years ago when I fancied a quiche but couldn't be bothered to make pastry, and now I make them all the time. Top tip; you can make them with sweet ingredients too, so I like blueberry jam and flaked almonds, or crystallised ginger and marmalade, but just fruit and a bit of sugar would work. Delicious, quick, sweet or savoury snack, light lunch or dessert :)

Moya Henderson Hi Moya. I'm so sorry, I didn't see your response and I don't know why. Genuinely sorry. I actually find they keep in an airtight container in the fridge for about 3 to 5 days, but they would freeze well too I guess depending on what ingredients you'd added. Anything with too high a water content, would go mushy and crystalised, but most vegetables and fruits would be fine

EGGScellent!! I'm going in for surgery 4 days from now and just made 36 of these! I won't be able to stand long when recuperating, so these will be my nutritious go-to meals! Also, as I won't be very active, I'm glad there's no fat (except for the coconut oil lining the muffin tins..and no carbs ). I still have a huge bag of frozen spinach which is thawing..so I'm making more of theses along with a spinach lasagna and some quiches tomorrow! Thank you for a great recipe!

I tried this, but all I had were frozen peas, filled large muffin tin (6 to a tin) and second time mixed cheese with peas then filled with egg. Delicious and quick and convenient on go wrapped in wrap. Thank you! Genius!

I've watched several videos attempting this and wanted to tell you I really enjoyed yours. Instructional, simple, leaves room for personalization and I want that tin! (And Norman's - GBBO - easy removal wooden board with the dowels, lol.) I will definitely make these and might add grated Parmesan to the egg mixture to have cheese throughout. Thank you!

I make these quite often in my mini muffin tins. So cute. Same recipe makes a quick frittata in a cake pan when I'm feeling lazy. Sometimes I just add Parmesan and thin sliced ham or bacon (seasoned eggs of course). Easy peasy. Leftovers keep well in the fridge and are Awesome on toast for a quick sandwich.

AWESOME! I was afraid that mine wouldn't turn out right because I needed 2 more eggs. It looked like I used the same am't. of fixins that you did, but I must have used less. Regardless, they turned out fantastic at 24 mins. using a silicone muffin pan. Thanks for sharing your video!

these are wonderful to make on a Sunday and any leftovers can be taken to work or eat before leaving for work. They are wonderful to heat up in the microwave ... perfect to have with coffee or tea. Thank you for sharing =)

UPDATE: Made them again and again and they never disappoint. Luv them cold, room temp or warm. Any tips on freezing / thawing them? So far, I haven't had any leftovers to try. LOL

My aunt used to make these Egg muffins with sausage and cheese every morning before school because we had to walk to the bus stop(it was a 8 minute walk) and they were soooo good
