Right, found it. Leaving details here in case it helps someone in the future.
Thanks to @darrengordon-hill for suggesting a usb issue, that started us (me and my son) down the path of finding the real cause. Which was.... drum roll... a dodgy front panel mic connection on the motherboard. We donlt know if it was physical or software however just disabling it in Windows Sound Control Panel didn't fix it. After a little more Googling, we found that we needed to disable the Realtek HD Audio in the BIOS. This did work, it stopped the whole thing from even showing up in Windows. Problem fixed, woop!
Maybe now I'll do the actual 2nd video I was going to do, he he.

What would be the way to go about this on Mac, running into similar issue but even clicking the key again doesn’t stop the sustain unless the track is stopped

Hard to know sorry, I'm rubbish with Mac's. If your issue is similar to mine then try somehow checking each of your usb's in turn?

    Bro, memories!!
Not happened in a while and not exactly sure how I fixed it (beyond unplugging/plugging back in).

@robin_miller_music literally everything - controllers, hard drives, audio interface - anything USB basically
      "Clashing MIDI requests somewhere"
