Pay attention to the fact that when Wolfgang cooks, there aren't a lot of ingredients in the dishes! It's quality ingredients prepared properly, with care. Yes he dresses up the plates with garnish and flowers, but the food is always simple, done right and spot on.
Austrian cuisine is just not fancy man... Schitzel is 4 things, Leberkässemmel is super bland and Krapfen is also not very fancy....
Dude I cannot overstate how simple the overall Austrian cuisine is compared to Vietnamines, Mexican or even Italian cuisine.... xD

And as already stated: authentic Italian recipes are usually very simple and don't require many ingredients either.

In Los Angeles, you can essentially wear anything to dinner. I ate at Spago last month and at the table next to us was a woman who brought a doll that looked just like her to the table and sat it front and center. Same purple hair color and clothes. In fact, the crazier you dress, the more people assume you are an eccentric billionaire.

Perhaps, but etiquette is also a thing. You don’t have to be rich to enjoy good food, but you should at least try to turn up dressed correctly.

I love how particular Wolfgang is with his childhood and how it really pours over to everything he does. He talks with so much warmth and passion and even though I’ve never eaten at Spago, I’m guessing that these same things translate to his food. Love him as a chef and as a person! Shoutout to Reach for sounding like Zuko too haha
This is the ultimate cooking. Different from those complicated fine dining. It’s simple but warm with heart and bring the flavour to the basis. I m really good at cooking. I feel it!!

It's funny, the smoked salmon pizza is really more a Flammkuchen, which is a traditional southern German/Austrian pizza-like thing. It's got the red onions, the cremefraiche and the extra thin crust

When I lived in LA I was fortunate to dine at Spago BH regularly and it never disappointed. Always a great scene, amazing cooking and wonderful hospitality. Wolfgang was always there, cooking, chatting with guests and just being a great host. It was so wonderful.. I sill never forget those days and will likely never encounter a restaurant that I love more. Thank you Chef !!

11:40 is when I realized they got him off the construction site outside and they just threw a blazer on him. That neon shirt is to make sure he is fully visible. Remember, safety first.
Wolfgang is a master of his craft he took transitional Austrian hospitality made in into the commercial product for US but left heart of it untouched.

Does anyone know why he added sugar to the base of the pan? Is this to caramelise the kaiserschmarrn? Surely it would make it stick more but looks like there's butter or cooking spray on the pan first... Hmm I can't figure it out!

I heard an interview he did, a long time ago, where he said he always wanted people to cook their favorite dishes for him I wished he'd been able to taste my late wife's pork chop chili. I'm sure he would have loved it.

O M G !! I live about 20 mi from spago in Beverly Hills and I haven't been there for about six or seven years but after watching this video I'm most likely going to go next Friday night! That kaiserschmarrn was the best thing I've eaten in my entire life! It was truly a spiritual experience ♥️
I'd probably be in tears trying that desert after being able to spend that time talking and learning about his past from him.

As I come from the same state of Austria as Wolfgang Puck does (Carinthia), it´s a bit funny to hear some elements of his/our dialect in his accent. (as Austrians we speak German, but each of the nine Austrian states has a own dialect).
i have never seen a recipe of kaiserschmarrn with sauerrahm (creme fraiche) and formage blanc. Gotta try that one. As an Austrian myself I am really loving Pucks innovations and stories. Gotta look out for his books

I love that the best chef in the world is primarily a pizza chef. He does everything, obviously, but his main restaurant is a very upscale pizza restaurant, and that’s fantastic.

As an Austrian I wish he had shared more of the cultural aspects of his food, like eating 'dessert' for dinner, even not being poor, it is traditional for us to have soup and then some sweet hot dish as a main🙂

As much as I admire chef Puck, I gotta question his notion that LA redefined US fine dining... Coz New York has one of the most prolific fine dining scenes in the world...
I think prior to Spago, NYC fine dining was traditional, like classic French, very Euro-centric which was sophisticated but not very playful or adventurous. LA/California has always had a more laid back and creative attitude toward dining not being as stuffy and traditional. i.e. deconstructed dishes/desserts

My favorite Wofgang Puck dish is his chicken pot pie!!!
Wolfgang keeps stressing innovation at his restaurants to attract new customers.
But he has to realize it's his classic iconic dishes that keep the old customers coming back, the return customers make up the bread and butter of his business.
He knows never to tamper with his Oscar Salmon Pizza, Chicken Pot Pie, Kobe Beef Sliders........Oh I'm drooling just writing about this.
Notice it's always the "comfort food" dishes that leave the biggest impression.
People want dishes that remind them of their childhood, that's why the comfort dishes remain popular.
