    Anthony Bourdain always said, 'when traveling, eat at the street vendors. They make their living feeding their friends and neighbors. If the food is bad, or they make people sick, they go out of business. That melon at the hotel breakfast bar is far more likely to poison you.' It is the far more authentic way to experience a new culture.

      it's also pretentious to be like "oh i dine in to nice, luxurious places and always make it an experience"
      not everyone has the time to make every meal special. not everyone has the money to make every meal special. not every chef has the means to open a dine-in restaurant. people do what they have to to get by. even if he doesn't enjoy food trucks, his dismissive attitude towards them really came off pretentious

      Puck is a hack. He is just a mediocre chef that got friendly with famous LA people at a time people didn't know any better and that was enough to launch a business he has been riding on ever since.

      It was when he was “training” for the movie Chef and went to Wolfgangs restaurant to learn. He wasn’t boasting. He actually made him another one on the Chef Show. He still gives him a hard time but it’s all in good fun. Great episode.

      It is an extremely rare name in Norway. But one of the very few is coincidentally a pianist (child prodigy) and composer and it IS his real name, due to his Dutch parents. But I have often thought the same. What if that guy grew up to be just a regular guy in a common profession?

    For the story at the end, I get it. He didn't tell the producer how to make a good movie, why should the producer think he knows how to cook better than the head chef?

      Yeah, but in the beginning he was talking about substitutions and catering to the customer. Dude just wanted his fish dry, it's like asking for a steak well done. Also he's missing out, some food trucks are 🔥🔥🔥

      It sounds like he deliberately made it too dry though. It's like saying you want your steak well done, and then the chef intentionally burns it to a cinder. It seems like he regrets it now and the purpose of the anecdote was to show that chefs should try and accommodate the customers' wishes.

    I loved that how he reviewed ratatouille and he said that it was accurate! My grandpa was also a cook and he enjoyed the movie. It is safe to say ratatouille is one of the best of the 2000s movie (there are other amazing ones too like Wall-e, but I love ratatouille because it also ties in with my family. my mom is a French teacher and we always watched French movies, so this one was a hit for us!)

    On the food truck thing, here in London Ontario there is a great community of food truck owners who make some really delicious and interesting meals. Sometimes you can find a great experience in the least likely of places

    He didn't say food truck food isn't good, he said he doesn't want to eat it himself because it's very important to him to sit down and savour his food. That is a very common attitude in many European countries although it's relatively foreign in North America. It's not about right or wrong or better or worse, it's personal taste and philosophy. Regardless I loved how he praised Ratatouille for authenticity and straight roasted Jon Favreau 😂😂

      @@ivanherrera3857 It's not really great food, it's greasy oily food. Burgers, noodles and things like that. He is a chef of a more sophisticated caliber. Fresh produce. Food that takes time to make and not two minutes of prep and dished out in a styrofoam palette.

      Being totally honest, I feel the same way he does. Food trucks don't strike me right. I accept that others feel differently, but there's a grossness to them that I can't disassociate no matter what I do. It's like eating at the seedy dive joint near your house to me, not something fancy. And when I see prices rise to normal restaurant prices, I don't go bother even with the rare ones I like.

    I don’t know why he said Jon was confident when on the chef show it was the opposite and Jon was super nervous and wanted to watch instead lol. Wolfgang just reminds me of a grandpa that misinterprets what you say and messes with you haha

      Yeah that seemed like he had a grudge, or just interprets things based on preconceived bias. It was pretty clear in the first scene Faverau was recipe building after hours, not working a line.

      @@hussaf1 I wouldn’t say a grudge, when Roy Choi and Jon visited his restaurant in Vegas he messed with Jon a bit but was very patient and generous with information and taught jon a bit. However he was wrong about Jon using a stand in for the chopping part lol because that really was Jon

    As a Wolfgang myself, I've always wanted to meet him just because of the name and I always hear lots about him. Also you know how many times people asked if I'm named after him.. "no I'm not named after him, I'm named after Mozart" 🤘🏽😎👍🏽

    It's slightly embarrassing to be an authority on food / restaurants and completely shut out a whole sector of the community. The experience of a food truck is the passion put forth and in many cases the chef takes your order, making it much more personal.

      There is an irony in it too. He says at the beginning about catering to the customers. Food trucks cater to the customers by going to them, rather than making them come to you.

      @@cgomes1610 i generally wish they'd taken another chef that isn't a huge 'celebrity' chef. there are tons of brilliant chefs - that easily can keep up with Puck or Ramsay in the kitchen (and are more creative), but they don't own multiple restaurants, and do not go on tv constantly.

    I’ve purchased a lot of his products over the years, and I must say, I haven’t been disappointed. Pots and pans, knives, a cheese board with cheese knives, a set of stainless steel mixing bowls. All very good!

    he didn't dismiss food trucks, he said he doesn't want to open one because he already has restaurants and he doesn't find street eating to be an experience. some people feel the same way about fine dining, it's not a type of experience they enjoy. doesn't make anyone wrong, and it's literally the opposite of pretentious to admit something isn't for you. he's not pretending to anything, he's just stating his preference.

    I am in LOVE with Wolfgang Puck, he has such a refreshing attitude towards cooking and culinary. "It is like painting a picture."

      yeah he's great isn't he. his comparison to art and cooking is spot on. a lot of us cooks are into the arts because we see parallels between the two worlds. you can be really creative in cooking, as you would with music or sculpting. expression

    Great cooks with food trucks might not be able to afford a 'beautiful restaurant' early on their careers. And whether you're standing or sitting down when you eat isn't really the point of an 'experience' - it's the food and the way it was lovingly prepared. Hawker / street food in Asia is awesome.

      It depends on the person. He said specifically for him, he does like everything to be an experience when eating. You dont, which is ok. He himself said it was very hard to operate one, and thats why he instead chose to stay with his restaurant.

    It’s sad but beautiful when a cook has to tell a customer, “look I know what I’m doing and something tells me you don’t so let me do the thing ok dad.” It does happen some people go to war when they dine because they did not get enough oxygen in the womb

    I always enjoy it when Wolfgang Puck goes into storytime mode. The shaaaaaade XD At the same time, he should try the whole roadside food experience in a different environment (or with different people) because I like standing and eating. Option two is to pack a couple of foldable chairs for customers [shrugs].

    Chefs are shaped by their experiences as much as anyone else, perhaps even more so because they can spend years if not decades in a specific discipline. Their opinions are based on what they have had the chance to see/eat.
    Maybe when he gets a free moment maybe we take him out for some good old fashioned street food....
    .... and take all the chairs away.

    I actually Wolfgang in Bahrain. It was the opening of the CUT restaurant that was opening up at four seasons. He was quite a chill guy tbh.

    I'm sitting here eating boxed curly noodles with soy stuff on them, some frozen chopped kale, and some pre-shredded mozzarella. and I like it, because it's cheap and easy to make. And I feel like he wouldn't judge me for that. And that is such a cool thing.

    His take on food trucks is a bit 'old fashioned' and slightly out of touch - given that Los Angeles and many other cities now have a vibrant, high quality, and gourmet food truck scene.
