He very carefully said it was about the taste, instead of mere visual impression. He had objective criteria for declaring something undercooked. Demonstrated it physically. Can’t ask for a better judge because it’s not all subjective.

@@ss11111ss ehh not really. Pizza doughs that are meant for stone ovens have very high hydration, they are hard to shape. It takes as much technique to learn to shape that kind of dough as to make proper noodles. If you try to use a rolling pin with them you will ruin them. So if they don't specialize in Italian cuisine, you probably don't actually have the proper technique to do it. Being a professional chef won't make you good at everything. Watch ramsay trying to make naan bread for example.

For anyone who dont watch the whole episode:
The reason Kasia looks so pissed is because the red team needs to drop one pizza to be left out of the judging (because the red team has more member compared to blue team). And the team decided to drop Kasia & Bev's pizza (they work in pair).
It turned out that the red team loses the challenge, score really bad.
Gordon decided to taste Kasia and Bev's pizza, and it turned out that theirs was the best among all pizza in the red team, and probably could've actually given them the winning.
That is why Kasia looks so pissed.

How the hell did only one good pizza come out from all of these chefs?
Apparently the producers sometimes mess with the equipment and ingredients, according to a previous competitor. That may be a factor in a lot of failures across the show, but it also provides a secondary challenge to see if the chefs can catch what is and isn't rigged. But then again, this is a previous competitor who lost, so take it with some salt.

I mean, the vast majority of people would be fine with the food these chefs cook.
Aside from stuff that is literally raw and unsafe to consume of course, that stuff is just mostly due to pressure from the competition, TV, etc.
Gordon and Wolfgang are extremely critical tho. That’s the point of the show - extremely high standards for “good”.
They would probably give the stuff you get at Pizza Hut, dominoes, etc 1 or 2 points out of 5 .... and yet those are the most popular pizzas on the planet.

You eat fast food all day? I dont think you should compare fast food to gourmet food. It would be different if they buy pre-made dough and made a Pepperonis or something. But again chef are not perfect creation who can cook all type of food. In HK they really have to step out of their boundaries and most of the time doing things that they don't know or not comfortable with.
