    自製豆腐花, 簡單又好吃!! 可以用來凝固豆漿的材料有很多, 這次介紹了3個凝固劑製作豆腐花的方法, 分別是: 石膏粉, 葡萄糖酸内酯, 魚膠粉, 每種凝固劑都有不同的小技巧. 還對比了3種凝固劑做出來的豆腐是怎麼樣, 味道有甚麼分別, 還有製作時的難易程度. 方便大家選一個自己喜歡用的凝固劑.
    Homemade tofu pudding, easy and tasty! Another snack that I always had when I was a kid. That is super yum!!!! So this time, I made it. The ways of using 3 kinds of coagulants to make tofu pudding are introduced in the video, i.e. gypsum powder (food grade), glucono delta-Lactone, and gelatin powder. Furthermore, the tofu puddings made are being compared in the video, based on the smoothness, the tastes, and the easiness of making.
    材料 Ingredients
    A. 魚膠粉版本 Gelatine version
    豆漿 - 500ml - Soy milk
    魚膠粉 - 7g - Gelatine powder
    冷水 - 40ml - Cold water
    B. 石膏粉版本 Gypsum powder version
    豆漿 - 500ml - Soy milk
    熟石膏粉 - 3g - Food grade gypsum powder
    玉米粉 - 3g - Corn starch
    冷水 - 40ml - cold water
    C. 葡萄糖酸内酯版本Glucono delta-Lactone (GDL) version
    豆漿 - 500ml - Soy milk
    葡萄糖酸内酯 - 1.25g - Glucono delta-Lactone (GDL)
    冷水 - 5ml - Cold water

      With gypsum powder, you can have your tofu pudding hot, cold, or room temperature. But a great comparison between the three, nonetheless. Thank you for sharing.

      我是用煅過的石膏粉

      @@user-vj4fo1xo5h 出水是正常的, 散開的話有問題. 可以有很多原因, 比如說豆漿問題, 試一下用其他豆漿. 不知道煅過的石膏粉試甚麼意思, 但用一般熟石膏粉就可以

    Hi, i tried the gypsum powder method. For some reason only the top layer managed to set and the rest is still liquid. Not sure where i went wrong. Is there anything i can do it save this? Can i reheat the liquid and pour into the gypsum mixture again? Thanks

      No... Only once. Pls check the amount of gypsum powder. Did u mix the mixture before pulling in the soy milk?

    I used gypsum, 2 Liters home made soy mild from soy beans. I also used corn starch (1 teaspoon) and 1 teaspoon gypsum. It does not work very well. Not Smooth. Please help me

      You might try my recipe. 2L soy milk should go with 12g cornstarch n 12g gypsum powder. The amount matters...
      Also, If u want it to be smoother with the gypsum powder, u might try to reduce the hot soy milk temperature to 85-90 degree celsius. If the temperature is lower, the particles in the soy milk move slower, so smoother. The downsides are it takes longer to condense, and hv chance of failing.

    You did not show how you get the soya milk did you buy the commercislone or did you blend the soya beans

      I mentioned at the end of the video. I bought the soy milk. The long life ones dont work, try the fresh ones.

      在澳洲的話, 一般華人超市賣的是食用石膏粉. 不確定的話問一下店裡職員會比較好

      Sure, the process of using GDL to turn soy milk into tofu pudding (condensing protein) is slower than gypsum powder. The result is the pudding is smoother, so cornstarch is not neccesary.

      冇一個匙size係內脂1.25g呀, 因為分量要比較準. 如果你有兩三個人食, 可以全部份量倍Double, 2.5g會容易d量. 食譜分量係一般食飯碗1.5個多少少

      之前用買果d豆漿真係唔係隻隻得, 一般失敗一係豆漿, 一係內酯量唔準. 或者試用啫哩粉, 最容易 :)

    雖然製作成功,從冰箱拿出來吃,然後放著一旁,而且不冷後就融化了...

      如果天氣熱, 室溫高就會溶, 和啫喱一樣. 所以有說用魚膠粉做只可以冷吃
