Oven roasted chicken with roasted veg. Yams, onions, carrots, beets, mushrooms, some balsamic splash of olive oil some herbs and spices.
Delicious.

As a side note, I loved your PCT series. I live in AZ and just made a quick trip to San Diego this past weekend. I informed my wife and kids that we were making a pit stop. I found where the PCT crossed I-8. Little campground right there. I brought some trail angel supplies but didn't come across any hikers. I did walk on the trails about a 100 yards. Does that make me PCT hiker? I know it sound crazy, but it was cool thinking of the people I've watched on you tube that walked where I was. I can only do a few miles a day given some ankle issues so I keep living the dream through you.
