Easy to cook "Claypot" Chicken Rice without using a Claypot

    Cooking claypot chicken rice in a rice cooker may not be authentic or give that burnt fragrant from the charred rice but it is more practical for most of us who have busy lives. This one pot dish can serve many people depending on the capacity of your rice cooker. Tastewise is as good as cooked in an actual claypot minus the charred rice of course.

      Stir frying the ingredients brings out the flavour. It still will work but it may not be as flavourful and aromatic.

      For extra flavour when added together with the dried prawn water when cooking the rice (optional)

    Has anyone tried this using a pressure cooker /multi cooker on the rice setting

      I think you could do the rice like normal and put the rest of the ingredients in a pot or bowl on a trivet above as the rice cooks

    Hi, if my rice cooker is auto cook setting only & only need around 30mins to cook the rice . So when I have to put the chicken & all the ingredients? Please advice, thanks 🙏

      I'm not sure but maybe you can try adding the chicken after 10 mins. If after 30 mins the chicken are not fully cooked, leave it in the rice cooker until cooked. You could also cut the chicken into smaller pieces so that they cooked faster.

    I tried your recipe today but omitted the dried prawns. It turned out quite okay though maybe I should have added some salt to the rice to make it tastier or add in some salted fish? 😁

      The dried prawns makes the dish tastier. Yes you can replace the dried prawns with salted fish.

      Here in Singapore you can find it at supermarkets. If you're living in western countries, then most Asian stores should sell them.

    Your dark soy is thick and mine is runny like the light soy sauce...
    The dark soy is not the Ketchup Manis is it, because that is dark, thick but little sweet

    That looks like a total mess. Part of the clay pot experience is the beauty of the presentation. Your final presentation is just a mixed up looking fried rice that wasn’t fried
