I cant wait to see the new vacuum sealer Dan buys! He doesnt get excited very often, but the vacuum sealer did it for him! LOL
Totally agree on the 10-14 days! We made a PVC rack for my garage fridge and we can hang 4-5 quarters in there for aging. Last year a buddy and I both shot a cow elk and aged the meat 12-14 days and it was the best meat, super tender great flavor, just awesome. It was hard not to make steak out of everything because it was so tender. We've butchered a few elk and antelope now but I still have a hard time figuring out which cuts are where on the animal. For instance I have a vague idea of where he pulled the top sirloin chunk from in the video but I'm not super sure. The hanging cooler set up is the eventual dream, but the garage fridge works for now. Would love to see a longer video or series of videos of how this guy breaks down quarters or everything really. Everyone has a different spin, but I'd like to see him break down things in a sort of slow very specific way, really describing where each cut is coming from and maybe what you can do with it. Thanks for the vid!
I had a late start to the world of hunting, but I do have to say the best meal I've had was the first deer I killed with my bow because I worked for it. Next on my bucket list is to kill and harvest an elk. I wish I had been introduced to this a long time ago. Thanks for your videos, they are very motivating.

Great video, a little late to watch it. Drew is a natural in front of the camera, he isn’t in front of it often but he isn’t shy. More content like this please. I took a butchery class with a local butcher and it really helped understand the layout, highly recommended finding a Good butcher Shop and asking to give a class. Lastly, I would recommend 21 to 28 days; the meat taste better but you do loose a little bit more meat the longer you let it rest for. Great video, all around. Keep it up!
My buddy started a butcher business this year so I sent by mule deer buck to him, but I aged both my deer and my elk myself. Processed my elk in my garage and boy does it feel good like you said, to watch your family and friends enjoy what you worked your butt off all year to make happen 🙏 great video !

I started butchering my own game three years ago to save money. I'm no where near this, but I bought a few things and have added to it every year. Butchering is now one of my favorite parts of the process, and yes it's so rewarding to provide and see my family enjoy it! I would love to see more of processing and cooking content! Shared...

Man this is great. I know I've said this before I'm not an elk hunting guy but this still helps a lot. My dad, brother and myself usually all get together and skin and butcher our deer together because most of the time they is the only time all three of us can get together. We are not perfect at it by no means but enjoy the process. Would like to see more of this maybe some tips and tricks on how to be more efficient at getting the silver skin off of the meat. Keep up the great work.

I've been doing my own processing for over 10 years now. I've upgraded equipment a little along the way. I was tired of rising processing costs, not knowing if I'm getting my own meat, and not being able to find a good processor who was open at the time I need them. I make burger, steaks, roast, breakfast sausage, snack sticks, and Jerry at different times. Drew's operation looks awesome!
That is a bad ass setup! I have done the same for every animal I have got except part of my first deer ever and except no where near doing it with gear that nice. Just a basic Cabelas grinder and Food Saver vacuum sealer. Does the job though. I do have an A/C wall unit in my garage I have been thinking of building a cooler around and putting a cool bot on so I can hang my meat. Great video guys! Love meat processing! Definitely going to have to tackle that cooler project next year

My pap made a butcher shop 40 years ago. We process all are own whitetail. We started putting beef fat with are ground meat. Now we don't we just grind it as lean as we can..I love doing my own

Y'all don't seem very busy lol. Any chance you could conjure up a cookbook with game meat? Sure, there are plenty of game meat books out there but they always seem to lean on the "too fancy for a family of 5 with soccer practice, dance recitals, and book club" genre. I'd love to see a cookbook for the working family who only has 15 minutes to make dinner.

2 weeks min is what I like with hanging elk in my coolbot.
What kind of chamber sealer was that? I won't be able to afford one soon but it looked like it's big enough to handle large portions which is what I'm looking for when I butcher a steer or 2 each year. Vacuum sealers are great but I've heard chamber sealers are the bees knees.

So In the off season would you just shut your meat cooler down and leave the door cracked? Or any special year round maintenance? Or ideal to keep running year round. Just thinking energy’s cost
That is correct - only use it when ya need it, clean up and keep the door cracked when not in use!

It costs $2k for 3 bull elk to get processed? Thats crazy. Its $95-120 in ohio for any size deer.
