How To Make Expert Level Pistachio Orgeat

- This expert level pistachio orgeat recipe is a little labor intensive but so worth the effort.
Pistachio, Rose and Cardamom Orgeat:
50g pistachios - shelled with skins removed
195g hot water
2 cardamom pods
40 drops of rose water
.4g gum arabic
.09g xanthan gum
165g sugar
Soak the pistachios in cold water for 5 minutes.
Drain and soak for another 5 minutes in hot water.
Once skins easily slip off, drain pistachios and remove the skins one by one.
Add the pistachios to a blender with hot water with the seeds from 2 cardamom pods and blend on high for one minute.
Pour mixture into nut milk bad and squeeze out the liquid.
While the pistachio cardamom mil is still hot, add to a clean blender with rose water, and sugar and blend on medium. Add gums while blender is running and let it run for a minute and a half.
Pour orgeat into a jar and label it. This should keep for around 3 weeks in the refrigerator.

This looks so good! If I only added gum arabic, would that be sufficient to prevent the orgeat from separating? If I didn't add that either, could I just... shake the container once in a while?

I watched this while snacking in pistachios! I’ve only made pecan orgeat (because I had a lot of them) but I should do this sometime soon!
Pecan orgeat is delicious! What are you using it in? I really recommend this recipe for pistachio orgeat. It takes a bit more time and effort to blanch, but it’s so worth it.
@@TheWeePearl the original use was for blood orange whiskey sours, when citrus were in season - it’s still good in bourbon drinks, but mostly for mai tai variations.

i love your videos! is it necessary to add in the stabilizers? would just shaking the syrup before use be okay?
Thank you! You could absolutely forgo the stabilizers and it would taste terrific. You might get some separation in the cocktail, but it will still taste great.

That's a LOT of rose water. Have you experimented with orange blossom water in its place? BTW, beautiful photography!
I think I have a very high tolerance for rose water lol. It actually is pretty mild. I do love orange blossom water. I haven’t tried it with this recipe, but I like it in my homemade orange liqueur.

Hi! I used roasted pistachios that came with the shell on. You can use raw but I prefer of the taste of roasted.

Absolutely! I actually have 2 strawberry cocktail videos on the way. That’s an amazing yield! You should make a shrub! It’s equal parts strawberry syrup to vinegar- I like malt vinegar with strawberries, but sherry vinegar would be great too!

I use this in a "Swedish Japanese Cocktail" 2 oz Aquavit, .5 Pistachio Orgeat, 3 dashes Ango. Oh boy!
