If its too spicy..you can replace sambal with tomato puree and diced tomatoes. If the asam keping taste is too overpowering for your taste bud, 1 keping already enough..the diced tomatoes already acidic..you can also replace sugar with tomato ketchup...add green peas or diced carrots...the recipe isnt fix...each household has their own version of ayam masak merah... But maggi also produce the ayam masak merah paste in a packet you know...its way easier and simpler. Nways,your ayam masak merah def looks delish!job well done!

The chili paste is very easy. You can try to find dried chilies, lemongrass, ginger, onion,garlic,tumeric and blend altogher then you have the paste ready. Pls do it. The paste is suitable for every dish you cook such as for rendang, curry etc

Hi Christiana & Jaoa 👋🏻 wow I'm so impressed with ayam masak merah Christiana's version 👍 the color and ingredients are exactly the same. There are few versions of making the dish , some add spices like cinnamon stick , cardamon you know the 5 spice but the dried fresh spices just a little bit 👍 and you could add a tablespoon of cumin too so it will become ayam masak merah berempah means with spices 😆 you should try this version more tasty not so much on the onions and ginger maybe half of the potion you've used and another one you could add half cup of coconut milk really delicious or just add a little bit of everything together 🤣 Your family really enjoying the dish and that's the best part of it when everybody was smiling and eating after long preparations 👏🏻👏🏻👏🏻

Agree! I grind a teaspoon of coriander, cumin and fennel seeds into powder. Add into the sambal while frying. If you have lemongrass and kaffir lime leaves. That's wonderful. You need to be around London to find an Asian market with lemongrass, kaffir lime and other spices.

I'm from Malaysia, fried chicken half cook so it will more soften in the sauce if you fried too longer it will make the chicken harder, because we will again cook with the sauce And if you want more spicy just put the sambal more..good job...up to you,

Looking at your family tucking in on the fiery dish, it reminds me of my time having a meal with a family in the Malacca Portuguese Settlement in Ujong Pasir. I have viewed your sojourn videos on the Malacca Portuguese Settlement. Surreal, I sense the same homey feel even tho a cosmic 12,000 km apart.

I'm from Malaysia, fried chicken half cook so it will more soften in the sauce if you fried too longer it will make the chicken harder, because we will again cook with the sauce

You actually can cook ayam masak merah by using chilli sauce and chopped tomatos. If no chilli sauce, just blender the tomatoes.

Woow amazing Ayam masak merah 😋 I am malaysian from kelantan. When I see your your family face, I remember my uncle wife face similar like you all guys, oval shape face, sharp high nose, very fair skin and tall.. her great grandfather was portuguese and married with malay.
