    My mother used to work at Dallah Hospital back in Saudi Arabia. She has so many Filipino friends....
    They used to make her pancit mostly. She doesn't eat it instead She brings it home for me and my brother.....
    Pancit is a nostalgic feeling for me.

      I agree. This video is to the point and makes it easy to watch and make you hungry. Others (videos) tend to talk too much. I have confidence in making Pancit now because of this video.

    The way you make Pancit is so inspiring. I've made and eaten a lot of it. What I really like about this one is the way you cook the noodles in the broth. And I like the way you prepare this dish in parts, each part separate and retaining it it s own favor. Not over cooked,not undercooked. Not all recipe for Pancit call for fish sauce or calamansi, but it makes all the difference. Pancit, done well like this is an experience to eat, oh that pillowy texture. Heavenly !

      No such thing as the "right version"...if you want the proper version, see Southern Chinese noodles, which is the ancestor of this bastard child. 90% of all ethnic Chinese in the Philippines are from the Fujian province, which has heavily influenced Filipino cuisine....authentic Filipino food does not include lumpia, pancit, syopao, etc...this man is mostly ethnic Chinese.

Ultimately, authentic cuisine is validated by acknowledging the inauthentic versions.

      @@brootal4234 You're a fool...your reasoning skills are flawed. A "hamburger" is from Hamburg, Germany. However, that just describes the meat, which is ground steak. A sandwich is English from the Earl of Sandwich who invented the sandwich while playing cards. A hamburger sandwich was a synthesis of both created in the United States....so, all American fast food restaurants make authentic versions of an American synthesis. Pancit is really from China. Noodles aren't even a staple in Filipino cuisine....you knew that, right??? I doubt it. Also, you're either very young or halted your education after high school; McDonalds was one of many hamburger restaurants on the landscape in 40's through the 1950's before Ray Kroc discovered it then pioneered the concept of franchising---see the film The Founder for an entertaining account of this....

    We Filipinos love using Calamansi for many remedies such as caught,sore through,and stress. It also powerful to cure acne and to whitens pimple marks and it have anti aging properties

    I worked at an elementary school. We always had our Christmas and End of Year parties at her beautiful home. There was always a platter of Lumpia. There was always a huge platter of Pancit and many other wonderful foods. ❤

    Moved away from Hawaii a few months ago and have been really craving pancit- so happy I found this video! Can always count on foodland lol. Never knew the name of the sour fruit either so thanks for including that! Kalamansi! Hope they have it at the store, I love extra in my pancit 😄😄 so ono!!

    Looks delicious. I've only made pancit canton. I was looking for a recipe to make bihon for a party this weekend. I noticed the only difference between the two dishes are the noodles. Thank you for sharing your recipe, I can't wait to make it. 😊

    I am italian. Though you asians only know spaghetti, I am amazed at all the different ways the different cultures make it. My girlfriend is Pinay/Viet and makes really delicious Pancit and Pho for me. I want to surprise her and make her Pancit, like her Lola makes, as an aniversary gift.

      Filipinos use dark soy sauce which is saltier. Get Datu Puti or SilverSwan. Kikkoman is not going to cut it. Too light.

    Looks beautiful. The one ingredient I always add to the chicken and shrimp is Chinese sausage (for either bihon or kanton noodles but not. Sotanghon). Try it with Chinese sausage- great for color and taste.

      @@syd2572 People dont easily discard their cooking preferences...for her to do that means that she probably has Chinese ancestry....nobody that's completely non chinese would use that item. I'm multicultural so other strands of me would use ground beef or European sausages.

      @@christian5327 She does have Chinese ancestry... just like a lot of filipinos. BUT that's probably not why she uses chinese sausage. It's common for filipinos to use whatever they have in the kitchen, so sometimes theres pork, sometimes theres chicken or seafood, and sometimes theres chinese sausage.

    I made this following almost everything except, I used lemons and limes and I couldn't find the patìs and I love fish sauce! But everything else superb it came out perfect thanks so much I'd been craving pancit bihon!

    Looks Good! I made this tonight. Different versions, Singapore noodles, Mei Fun, etc. I use a different method like others, doing all the prep work, chopping and soaking noodles before then frying in steps, finally adding noodles.

    Great cooking. I like the idea of soaking the bijon to the boiling broth. Flavors get absorbed. That makes a lot of sense.

      Yes! My Lola would poach her chicken and then shred it for the pancit. She would soak or cook her noodles in that water. I go further and season that water like I'm making broth. It's not my Lola's...but it will do!

      I agree! He didnt over cook the shrimp Lol! I saw some videos and they started cooking the shrimp first then added veggies and never took them out. YIKES! I also liked that he added black pepper because that does give it a certain taste that blends all he used together very well.
      Plus he used fish sauce ...very important.

    Yum! I can't wait to try this but I don't think I've ever had it with citrus, so I think I am leaving all citrus flavors out. Maybe I will squeeze a little lemon on a test taste to see how it tastes before trying to find the calamansi in stores. Thanks for the great video!

    I searched for a long time for a pancit recipe and this is it. I was really nervous about the rice noodle. I have not had very much luck with them in the past. Mine came out perfect. Good flavor. Thank you!!

    One tip for you when adding Olive oil, I'd suggest when shaking contents in the pan, to do it over the sink or unoccupied counter top instead of right over the heating element.
    I felt this could minimize chances oil splattering accidentally on the stove.
    Great recipe look forward to attempting it some day!

    Amost like the way my mom used to make it except for she would soak the noodles but that's probably because that what we did at that time.
    Everything else even the way you would separate the cooking, was right on!

    Nice, nice. I like to use peanut oil, oyster sauce. I add chinese 5 spice, maybe a little rice vinegar to help brighten it up. onions and peppers.

    I recently have been cooking this recipe
    for quick summer lunch or dinner.
    I turned it up a notch by grilling my
    chicken breast and making sure
    the vegetables are slightly crunch
    before I turn off the heat.

    I just made this recipe and it was SO GOOOOD!!! But - what can you add on the side if you would like it Spicy? Any advice would help! (Even if you can just add it to your own plate when it’s already served)
