    I hate how tofu is seen as a meat replacement. It's its own damn thing, and when cooked properly, is fking delicious with great texture.

      Yeah, I think it's really annoying that people shy away from tofu cuz they see it just as a meat replacement even though it's its own damn thing.

      These folks have never had fried tofu. Delicious! I'm too lazy to cook it at home, but I'd choose fried tofu over meat any day of the week.

    That's a smart outlook. I eat lots of meat but have nothing against all veggie meals, and enticing me with a well cooked vegetable based dinner is going to be more appealing to me then trying to feed me fake meat. Heck one of my favorite meals is vegetable fajitas.

    Finally a vegetarian video instead of an all the way vegan one. I'm an omnivore but am trying to put more veggies in my meals and as of eight now am not buying much meat due to expenses. This was an awesome video with amazing tips! ☺️

    Thin sliced deep fried tempeh is the best. Many recipes from Indonesia that makes tempe and tofu taste soo good. I’m not a vegetarian but loves tempe and tofu

    I eat meat but I love meat substitutes! I think it helps that I have to go vegetarian at most restaurants (I eat halal) so it's opened up my palate to things I wouldn't have thought to try otherwise at home (tofu, butternut squash, etc). I recommend trying to challenge yourself and try a vegetarian dish when eating out - you'll never know what you like!

      Wow, that’s the same for me! Recently I’ve been exploring tofu and just got some soyrizo today, as well as impossible ground “beef”. This new world is so easy to prepare because I don’t have to wait to meat to thaw and it’s halal, so I can get protein from regular grocery stores as opposed to needing to go to a halal meat store. Even my husband (omnivore) gets excited about tofu. 😄

      Honestly, they're are some that are very affordable.I'm not rich. I'm a family of 3 & we make as low as $36,000 a yr sometimes & when there is a democratic president, our income is over $75,000. This yr is our lowest income. I was able to afford someone to prep my lunches for work. I paid $30 a wk. More than it would be if I made it myself, but I always forget my food in the fridge. The guy who made my lunches brought them to my job so I could stick them in the fridge. I ate my lunches most the time as left over dinner at home. Prior to that, I was spending $50 to $70 a wk for lunch if I ate at work. If I didn't eat, I still had left overs at work for when I didn't have a lunch prepper.

      @@anna.m8 It's India and average income in my country may range from meagre to millions as we have quite a few world's richest millionaires. The point being, we have a rich culture of making and eating only freshly prepared meals because food should be always consumed fresh. Each household be it a beggar's or a rich person's they prepare each meal separately since they don't eat in dinner whatever is cooked in Lunch. And dinner are usually freshly made. We never had concepts of meal preparation or cooking in bulk or cooking for 2 3 times. It's always for that particular meal. Now a days since a lot of people are working in corporates, busy and stupidly following western culture, they prepare few things in advance and keep.
      Hiring cooks or maids who cook for families is a routine here. It depends upon what they agree to. We have a culture of having cooks prepare food for kings & queen's and so many keep someone to cook for themselves each day and unlike this so called meal prepper in the above video, they come to your home daily and make fresh food. That's what is called as food and eating fresh and healthy. Whatever is eaten otherwise is stale.

    How does Erica keep track of what ingredients are at each house? There will certainly be leftover spices, soy sauce, vinegar, olive oil and salt from today's meal prep!

      As a personal chef, once I confirm my clients menu for the week and write my shopping list, I email them a pantry check list for the items I will need. You actually start to memorize what is in your clients pantry very well. It is a great brain workout & great for strengthening your memory, but I do double check with my clients.

    Love these meals I make a sweet potato chili on a fairly regular basis. We eat vegetarian usually once a week or so we find doing Indian flavours is great for vegetarian food

    I never think tofu and tempe as a meat replacement. They are diffrent, and taste diffrent. Tofu and tempe have their own charms, and i love it as much i love meat.
    But maybe we just have diffrent culture.

    The trick with eating meat replacements is to not think of it as a replacement, that thing you are eating is not meat and it never will be, and that is completely okay, and is okay to find things that mimic texture or flavor, but if you are looking for meat eat meat

    As a mother with toddlers I see saucepan handles sticking out, oven indoors open too long. Trying to do all this with a child hanging on your leg would be impossible or hair pulling. It would be awesome to have someone doing it for you or at least someone to watch the kids.

      You can get anything from the internet, but yes some stores have them. I usually bring like 10 boxes though when I’m at Heathrow.

    One of the things I struggle with when bulk cooking is how to safely cool food down quickly (i.e. not allow it to sit in the “unsafe” temperature range too long).
    I’m cooking for one (my husband), and like to have pre-portioned cooked meals in the freezer for when I’m not well enough to cook.
    But when I cook a large amount of food, I struggle to get it to cool down enough to go into the fridge in a timely manner. Where we live it’s really hot most of the year.
    Obviously I can’t just take hot food out of the oven and put it into the fridge (it would bring the internal temp of fridge up and make other foods unsafe to eat). But I also can’t just leave it hanging out on the bench for hours until it’s cooled down.
    I put it in individual containers and stir frequently to help it cool, but it’s still a challenge. Any tips?

      Some people spread it onto baking sheets in a thin layer. You could try freezing the sheet pan but I'm not sure it would make a huge difference.

      I like the baking sheet idea... if u are making something liquify like soup or stews, if u have 2 large metal bowls or pots, one bigger than another - u can put ice water in the bigger one and the food in the smaller one. Then stir every once in awhile so the food that is hot in the center moves out to the edge and gets cooled by the cool metal. It takes me only 30 min or so to cool a gallon of soup this way, and is easy as long as u have a fridge that has an ice dispenser.

    I am an omnivore/meat-eater but occasionally will have vegetarian meals here and there. But at least for me, Tempeh is one of my favorite after beans, like it's the easiest (and cuz I am not a big fan of Tofu) but recently found pastas too
    Coincidentally, currently I am going vegan for 2 weeks for personal reasons - I didn't have meal preps cuz I have no time and space to do it in my dorm, so it was rather challenging especially with no eggs, milk or cheese 😓

    Perspective is key--you don't hafta be rich to buy a few home-made meals on occasion. Take the money out of your grocery budget, as those are groceries you ain't buying!!

    So you cook food then put it in the fridge then reheat it?🤔
    Won't there be no vitamins left in it?
    Also how many days can you store cooked food?

    I *wish* my bf was more open to vegetarian foods, but he'll only eat meat replacements. I'm trying to be healthy, not replace junk food with more junk food :/
