what do you use a food scale for when meal prepping
It depends on how experienced with cooking you are ^_^
If you are new to cooking and you follow a recipe, having a scale makes it so much faster to just weigh everything (for instance if you know how much a cup of flour/sugar etc. weighs, and you need 4 cups, it's just some fast simple math and dumping everything into the same bowl. The result is faster cooking and less cleaning.
If you don't follow a recipe, and freestyle more, which I mostly do, using a scale is nice to have an idea of the proportions between the different ingredients you put in. It sounds like a useless step, but trust me, if you end up loving the new dish you have created, you will hate yourself for not including this step. Because if the dish turns out amazing you will be ready to write down the recipe quickly, and use it over and over again (with the scale ;) ) in the future ^_^
Standard I always, always have a food scale, cutting board and a good knife and a composting/garbbage bowl next to it. whenever I food prep. The rest of the things depends on what I am making :)

Good on her!! She seems to do well for herself and is in kitchens of people who do very well, and her kitchen essentials are just that, essential! Like I expected a LOT more things but yeah, you need this at least!
Thank you. (For me, vanilla too perhaps? dried fruit (dates, apricots, almonds, walnuts)? conserved fruit compotes, tomato coulis, organic veg box (delivery if you can or grow your own, conserve, freeze, dry what you don't use), za'atar, dried chickpeas...)
I have regular balsamic and reduced balsamic for when I don't want to go too acidic. A balsamic glaze is great on salmon! Also I always have chicken stock, coconut milk and red curry paste. You can turn any protein and veggie into a nice quick meal with those.
Something I noticed, but Chef didn't mention... All 4 of her pots/pans are stove top AND oven safe. Growing up, my parents always had plastic handles on their cookware. As an adult who grew up eating boxed and take out meals, I started cooking/eating "real" food which a lot of times has you start on the stove top (browning ground beef, for example) then finishing in the oven. Chef's cookware handles both. Another thing I always have at least 2 of is glass casserole dishes - 1 big, 1 small. That's just my personal preference. 👩🏽🍳🔪🍳😷

Erica, could you provide a link to the glass “Tupperware” that you use? Given that you’re constantly using these with your clients, I’m sure that they must be very sturdy.
We’ve had wooden spoons and spatulas and cutting boards, but I only learned recently that you should really be waxing them regularly. Learned the hard way that the wood quality goes down (rough, cracking, etc) if you don’t think about it for a couple of years.
Also who needs tongs when you’ve got a good pair of chopsticks?

(1:50) It was really cool that you can see the reflection of the person recording her video. I like this girl and I LOVE animals, however I do have a problem with pets in the kitchen. Since she is cooking in her own apt, how can she prove her kitchen is sanitary in spite of having two cats?
Yes! I love animals too, but I don't have animals in my house. They has a tiny house in backyard.

@@purr-maw-ee I have seen her past videos. I do know she usually does cook in her client's kitchen, but this time she was cooking at home. There are times that happens. The health department has no jurisdiction over a private residence, so she can have cat hair flying everywhere if she wanted. I was questioning the sanitary conditions of her kitchen with two cats.
@@CC-si3cr this time she is simply talking about meal prepping not actually making any food for clients so basically any cat hair is only going to her food, you have no way of knowing if she even cooks for clients in her home or not. And if she did may be she keeps the cats at a different room while she is, surly she wouldn't risk her job for sth like that.

You know when she said Tupperware I was wondering if they came out with a glass storage container line. I am the same way...a stickler for saying things properly. ESPECIALLY since she IS doing a video on the proper things to have in your kitchen. She should be using the correct names for items. That way we know what to buy.

She buys fresh groceries for her clients and cooks in their home if you watch her other videos. And in the beginning it clearly states that normally we see her in her clients kitchens, but today she is showing her staples from her kitchen. ... it helps to actually listen.

@@blacknbougie8021she does pay for it, but I believe the cost of food is covered when they pay her. There is a rate she gives them based on food, and has mentioned that if they want special ingredients that session she will leave a note if they need to reimburse her for it. Then she will cook the food there, and clean up afterwards (dishes and trash). But it is very hygienic because she buys the food straight from the store and cooks at her clients house. Hope that helps!
