    Spatchcock chicken is delicious. I loved the instructions for the chicken sauce! My favorite way to cook it is in a cast iron pan and favorite recipe is Jacque Pepin's mustard crusted chicken with mashed potatoes. Pure comfort food. I'm not great with knifes so I have these German garden shears (specifically made for chicken LoL) that cut that bone right out in a snap. It's a great video--everyone should learn how to do this 'cause--it's definitely "change your life" chicken!

    Randy we are huge fans!! and I can't wait to try this recipe, am giving it a shot tonight. Also I have started using the little metal racks for all chicken, so it doesn't rest in its own juices. Game changer!
    Do you have an air fryer ?? Would love to see some air fryer recipes

    I'm so happy every time you post a new video and today was no exception. I have ordered the spice blend you applied all over the chicken but I'm wondering about the amount of salt. I didn't hear you say to brush off some before roasting so I'm assuming it doesn't turn out too salty. Please continue doing You in videos. We all love you and love to learn from you because you are so damn interesting. Thanks a million.

      @@dinnerpartytonight I have always cooked chicken out of the refrigerator and it never came out right, especially chicken breasts - always dry. Never heard a 'chef' say this. Thank you for giving us all a real education. I look forward to making a spatchCOCKed chicken the correct way. 😉

    Best way to cook a bird. I've done it in a screaming hot cast iron pan. Good to see a new video, Randy. I love how you have an academic approach to cooking and educating. I learned a lot working in restaurants, both in kitchen and on floor and continue to learn from you. I know the techniques but can't remember things like "buerre blah blah". A couple pats of butter at end of most sauces. OH, I also wanted to empathize with flooding in theatre -- the community theatre I was involved in (which is in a historic Mill that sits on a watershed) flooded during a past hurricane. We lost that season. Historical society helped foot most of the bill for renovation. Took in 4 feet of water. Lost a lot of the archives, but after that we raked the audience seating and got central air.

    I kept calling it scratchcock and I knew that couldn’t be right. Good thing I watched this a second time and learned that it’s “spatchcock”! Tee hee I said spatchcock. We’re going to make it next week.

    Lovely video as always. Your energy and laugher is contagious. Brightens up my day and it sure does that for many others.
    This dish is perfect for a day of relaxation. Simple and uncomplicated as life should be.
    How are you, Leo, Lynn, your friends and family holding out in these times of corona virus.
    I wish I could have joined the girls night and taste the recipes. ☺

    The island girl in me loves the wings too much to remove them. As a treat the seasoned golden brown tips of the wings, the popes nose and rendered chicken skins are flavor bombs

    I use my oxxo shears for spatchcocking. They come apart and can be put in the dishwasher. It’s safer, I think. Isn’t it fun to say spatchcock and then act like nothing’s funny?
