Impressive menu -- great taste. Half the family was sick for Christmas so we are going to make it up with a WinterFest. Porchetta is my goal. LOVED the break out to By My Side -- reminds me of of my lost elder sister who died sudden;y 3 days before CHristmas.

You need to revisit the rinsing mushroom aversion. If you are going to cook them right away you can put them in a colander and rinse them in running water shaking them around while doing so. Then put some paper toweling in the colander and shake them around again to dry them off. I do it all the time and it works. I promise.
I look forward to the Christmas Spectacular every year, and this one did not disappoint!!! I finally got to watch the whole special and, as always, there will be some new items at my Christmas events in 2025. The country pâté and beetroot-cured salmon are very intriguing! Finally, no matter what you are serving... tamales at Christmastime are always appropriate 😛Go Team Lisa 😉! I feel weird about nothing green. The iceberg doesn’t count. Speaking of the crab Louie, that was two servings on that plate. Couldn’t we have a nice roasted veg medley or even some crudite for h’ds? Other than that it was a spectacular menu and great show. Merry Christmas Randy and crew.🎄❤️
I had a hard time finding a whole pork belly, loin attached (I did my research). I started looking too late. Maybe I will do again next year. I watched the same videos Randy mentioned, but I know Randy will distill down all tje knowledge for my tired brain 😂
