  • Eating or cooking vegetables is not the strong suit of most of us. Yet the fall has came with its many delicious vegetables for another year. So, we decided to turn the tables! Today, we are talking about five different ways of cooking vegetables 🤩 Of course, as you adopt these methods, you can also experiment with veggies from other seasons!

    Making İskender Kebap
    2 large sprigs of leek, roughly chopped
    3 tablespoons olive oil
    4 tablespoons savoury yogurt
    3 cloves of garlic, 2 cloves sliced and 1 mashed
    1 tablespoon butter
    1 tablespoon tomato paste
    Black pepper
    Salt
    • Heat a large pan and add the olive oil. Add the leek and add 2 cloves of garlic to increase the taste. Sautee around 5 minutes on high heat until they get a brown crisp.
    • For the yogurt sauce, add the yoghurt and mashed garlic in a bowl. Season with salt and black pepper and whisk until it is creamy.
    • For the tomato sauce, add the butter in a saucepan. When the butter melts and gets brown it acquires a great taste. Add tomato paste and stir very well. Add 5-6 tablespoons of water to make it like sauce. Add a pinch of black pepper and a pinch of dried oregano. Simmer for a couple minutes. You can use tomato paste, puree, or juice.
    • Time for serving! Get a big plate and place the sauteed leeks. Spread the yogurt sauce and don’t hesitate to dirt the plate as well with yogurt.
    • Add tomato sauce in the same way. All done and ready, leek made to take you heaven. Enjoy! If you like you can add some minced meat or chicken on top as well.
    Making Soup
    300 g pumpkin, 2 handfuls roughly chopped
    1 carrot, roughly chopped
    1 onion, roughly chopped
    7 cloves of garlic, whole
    1 walnut-sized piece of ginger, grated
    1,5 L hot water, 6 cups
    Parsley
    Red pepper flakes
    200 g canned kidney beans or any beans or peas
    2 handfuls chard or spinach, chopped
    • Heat a medium sized pressure cooker on high heat.
    • Add the pumpkin, carrot, onion, ginger, and water.
    • Close the lid and set the pressure setting to low. When the lid is tight and the pressure is enough to cook, place the pressure cooker on a small burner on low heat. Cook for 8 minutes.
    • If using a regular pot, cook around 40 minutes with lid on until all veggies are softened.
    • At the end of 8 minutes, turn off the heat and remove the pressure of the pot and open the lid.
    • After all ingredients are cooked, blend the soup with an immersion blender until it is smooth.
    • Ladle the soup into bowls sprinkle with red pepper flakes and parsley if desired.
    • If you want, you can make your soup more fulfilling by adding boiled beans or chopped of greens such as chard or spinach
    Healty Roasting
    2 red onions, cut into wedges
    200 g broccoli florets, 2 handfuls
    2 carrot, roughly chopped
    1 large beetroot, roughly chopped
    200 g pumpkin or sweet potato, 2 handfuls, roughly chopped
    7-8 tablespoons olive oil
    Half teaspoon sumac
    2 cloves of garlic, mashed
    Half teaspoon red pepper flakes
    Half teaspoon black pepper
    Half teaspoon salt
    1 tablespoon pomegranate molasses, balsamic vinegar would do great
    To garnish,
    2 handfuls pomegranate
    1 bunch rocket
    1 cup fine bulgur
    • Preheat the oven on 250 C (480 F) grill mode, without fan.
    • To make the delicious dressing, mix the olive oil, sumac, garlic, red pepper flakes, black pepper, salt and pomegranate molasses in a glass.
    • Pour the sauce over the veggies and place on a baking tray. Gently toss to combine.
    • Place them into oven and bake for 20 minutes, or until tender and slightly browned.
    • After you take out from the oven, serve immediately.
    • If you want, you can add some goodness to make more fun.
    • Pour boiling water on fine bulgur- up to 2 cm higher than the level of the bulgur- in a bowl and close a lid to expand bulgur. Bulgur will soak all water slowly.
    • After bulgur expanded, transfer to a dish and add your roasted veggies, and sprinkle some pomegranate and pumpkin seeds.
    • Another way to eat roasted veggies: Combine them with the rocket or any kind of lettuces. Afiyet olsun!

    Meze Making with Yoghurt
    3 carrots, coarsely grated
1 celeriac, coarsely grated
    1 clove of garlic, mashed
    4-5 tablespoons savoury yoghurt
2 tablespoons tahini 
1 green apple, diced
    3 tablespoons extra virgin olive oil
    1 levelled teaspoon salt
    To garnish,
    Parsley leaves, chopped
    Extra virgin olive oil
    Roasted sesame seeds
    • Heat a medium frying pan over high heat and add 3 tablespoons of extra virgin olive oil.
    • Sauté the carrots and celeriac for 2 minutes and don’t stir at the first 2 minutes to let the veggies turn brown.
    • Cook for another 2 minutes and add the salt while stirring occasionally. Don’t stir too much and mash the carrots.
    • Transfer the veggies in a bowl and set aside to cool down slightly.
    • Meanwhile, whisk the yogurt, garlic puree, tahini and a pinch of salt until it's smooth and creamy.
    • Add the apple to yoghurt and mix the veggies with the yogurt and transfer them to a dish.
    • Drizzle with some extra virgin olive oil and sprinkle some parsley leaves. Enjoy!
    Stir Frying

    50 g sucuk,sliced as semi circles, sausage or minced meat would do great as well
    2 tablespoons olive oil
    A handful of pumpkin, sliced
    2 purple carrots, sliced, or beetroot, red cabbage
    1 red onion, cut into wedges
    2 handfuls of broccoli, chopped
    1 sweet red pepper, sliced
    Stale bread, cut into cubes
    1 teaspoon dried mint
    3 tablespoons savoury yogurt
    Red pepper flakes, to garnish

    · Sauté the sucuk with olive oil for 1 minute in a frying pan and transfer to a dish.
    · Do the same for pumpkins for a minute.
    · Add the carrots and onion and cook on high heat for a minute. Transfer a dish as well.
    · Sauté the broccoli and peppers as wel and put back all the veggies and sucuk into the pan again and sauté together for another minute. This way sucuk will give all of its spice to the vegetables and the taste will be incredible. Transfer to a dish and ready!
    · You can eat it like this, or you can add some stale bread on the pan and add 4-5 tablespoons of water and the mint. Deglaze all the flavours with water and you can make the delicious bread base for your veggies. Noodles or rice would be great with the stir fry as well.

    I love your vegetarian dishes and ideas. I've been a vegetarian last 40 years and I really enjoyed eating in Turkey - so many tasty dishes with aubergines! I prepare hummus as I saw you did and it's very good. Yes, give us more recipes for preparing simple and delicious veggie meals.

      I couldn't agree with you more. Turkish food, like Indian food is so blessed with a concentration of veggie dishes, it's marvelous. Also, if you're vegan in our time it is easy to swap out traditional yogurt for plant based yogurt's.

    In Canada we get all kinds of lovely root vegetables in the fall. I will definitely try out some of these recipes! I would also love to see a video on air fryer cooking. I got an air fryer about a year ago. I make a lot of chicken wings, French fries, and tofu in it. I would love more ideas!

    In Romania, we have many Turkish inspired or adapted foods, they became part of our traditional foods over the years. Pilavs (pilaf in Romanian), meatballs (chiftele in Romanian), baklava (baclava in Romanian) and many many others. They have all been a staple in my family, I grew up with them and adored them. My mum made the best of them! She also used to make a crudite salad which is similar to yours in this video: grated raw carrots, grated raw celeriac (the root) in equal quantities, some grated apples and a dressing with home made mayo (always with a little mustard and lemon). It is so so so delicious!
    Your videos make me feel so happy and often remind me of my mom's recipes. Thank you!

    This is the episode I was waiting for. Everyone enjoys their mains and carb dishes but, few like vegetables.
    Here in USA most only eat vegetables if fried or cooked with bacon butter or cheese sauce. We need healthier ways to enjoy all the different vegetables which are so nutritious and delicious. I am vegan.
    I 8love the ways you suggest to upgrade or change flavors. You are such a calm and confident professional. I really enjoy you for so many years and tell everyone about your style of cooking.     Older Scottish person here, so I too grew up eating soup at least once a day, often twice. Still think its the cheapest way to get healthy food into a family & tastes great too.Plus soups tend to get better tasting after the first day.
    I treated myself to an Instant Pot a while back. The pressure cooking & slow cooking functions mean I can make meals cheaper & quicker with it. The air fryer is also quick & cheap rather than heating up a large oven. Between the the two of them my energy bills have dropped a lot, especially good with the current high fuel prices.
    I was looking through your Etsy store the other day & saw a triple set of tin lined copper pans for making my menemen, sucuk & eggs, shakshouka & the likes, will be ideal for some of today's recipes. They are a great price & very good quality. Am I correct in calling them "sahan"? Been a long time since I spoke any Turkish.

      @@leesteal4458 Yeah, this is my first house without real fireplaces & a wood fired range.
      The smell & taste of wood fires really adds to the flavour.
      I enjoy cooking over an open fire too. You can cook just as well on a well laid fire as on a stove.

      Think it is going to be a cold one. Maybe some fava bean Beton [cement] for breakfast will keep you warm during the day until you get home at night?

    As always this another of your videos that is extremely helpful! My husband and I are planning a trip to Turkey September to October next year (of course with a stop in Istanbul!) and want to get healthy to enjoy our trip! Eating more veggies is part of our plan. Also, I would be in favor of a video on using air fryers as we are also thinking about getting one. Thanks for all you do for us all over the world. Please take good care of yourself! (p.s. We live in the Outer Hebrides in Scotland...otherwise known as the "edge of the world" .

    I really like your creative ways of making veggie filled meals-with your expert skills and Turkish influence!This is coming from someone who’s been learning to eat more dominantly plant based the past couple of years and have been building my repertoire of plant based meals for myself and my family.
    I just made your favorite traditional red lentil soup and it was delicious! So quick simple to make but so new to me with great tips. I ended up pressure cooking diced yellow Yukon potatoes and my 5 year old and 1 1/2 year olds devoured it!
    I’m also interested in learning more about cooking with an air fryer, since you’re the queen 😊 Thank you so much for sharing yourself with all of us. Keep it coming! ❤

    We make grilled veggie Iskander with grilled eggplant, red peppers, mushroom, red onion and still serve over bread. My daughter’s favorite. 😋
