Aujourd'hui, je reproduis une recette d'un grand chef français : les œufs en meurette revus et corrigés par Bernard Loiseau.
Bernard Loiseau
Né le 13 janvier 1951 à Chamalières (Puy-de-Dôme)
Décédé le 24 février 2003 à Saulieu (Côte-d'Or),
est un chef cuisinier français, restaurateur du Relais Bernard Loiseau à Saulieu.
Avec ses trois étoiles Michelin et sa note de 19,5/20 au Gault et Millau,
il a été l'un des chefs français les plus médiatisés
des années 1980 et 1990.
Si vous voulez l'essayer vous-même, voici les ingrédients : (pour 2 personnes)
- 200 g de poitrine de porc
- 4 œufs, aussi frais que possible
- 1 carotte
- 1 oignon
- 1 citron
- 20 g de beurre
- 300ml de vin Côtes du Rhône
- Un peu de vinaigre
- sel et poivre
