    Just saw your video on this recipe, because my wife loves rice pudding. I gotta tell you brother, you are the man with the way you instruct the public with everything from the ingredients, to the prep work, the cooking and the end results. A Sincere Thanks brother. Just made this tonight and it turned out great. I used short grain rice instead of long (since that's all I had) and I halved the recipe. I think next time though, I will add more vanilla and WAY less sugar. Other than that it's a great recipe. The consistency and texture are perfect. Thanks for sharing it with us ^^

    This is basically the same recipe I use. I like nutmeg as well but that's personal taste. One thing I recommend is keep 1/2-3/4c of milk out of the pot and mix that with the egg. It helps prevent curdling.

    YES!!! This is my second time using this recipe! I am happy to have finally made the perfect rice pudding after an embarrassing amount of years. I found that using medium grain rice gave me the texture that I was looking for, but the egg was the secret to getting that pudding-like consistency!
    I have tried using egg in the past but It has always failed miserably. My rice pudding is chilling in the fridge now! I still get bits of cooked egg in mine, but oh well!

  • @chainsawkitten3766
    @chainsawkitten3766 9 лет назад +10

    MINE is simple - one cup rice, one cup sugar, half gallon whole milk, 2 cinnamon sticks, peel of one lemon, pinch salt. Put it all in a big pot, bring to boil, lower heat and stir stir stir stir stir until rice is cooked and mixture slightly thick. Remove cinnamon sticks and lemon peel. Add a splash of vanilla. Pour in custard dishes, sprinkle with ground cinnamon, chill.

    I usually don't comment but... RUclips food videos are the hard work of Chefs, Home Cooks, Grandmas and sometimes kids. When you see the measurements listed and watch the video, most of the time it's a basic recipe that can be tweaked to your liking. Stop dogging the hard work of the RUclips star. Adding your tips of things like "raisins are a great addition " to the comment section is the proper way to tell the viewers that like raisins to try it. > RICE PUDDING ON! Hehehehe

    You want the eggs and the pudding to be as similar in temperature as possible when mixing the two together to prevent the eggs from curdling. The proper way to do this is to take small amounts of the pudding and mix it into the eggs, once you've done this a couple times, mix the mixture into the remaining pudding.

    My tweak is to add 2 less cups of milk, only 1 cup of sugar, and more cinnamon. I also tempered the eggs for insurance. It makes less pudding but is more suited to my family's taste. It's great that your recipe is so fool proof it can be modified and still come out wonderful. Thanks for the inspiration.
    FYI: You could also substitute in skim milk and artificial sweetener. It's the starch in the rice along with the eggs that makes this a creamy custard.

    I use 2 methods.
    1st Method (Quickest): Lazy Mans Rice pudding - I usually take about 4 cups of cooked rice, and add a can or so of sweetened condensed milk. Add vanilla, throw in some raisins, and add a little milk (skim,2%, whole or whatever you like) to thin out the canned milk and reach desired consistency. Sprinkle Cinnamon over the top and chill. (don't eat too much, its really rich)
    2nd Method (Quick): Alternative would be to make an old fashioned cornstarch pudding and then add the cooked rice, raisins and top with cinnamon.
    Both methods taste pretty good and are very easy to make. A Side note, you may want to pre soak and then drain your raisins. (If its an adult only dish a nice rum works well)

Either way we just boil the grøt rice/rice pudding rice in milk for a little over an hour and boom, the rice pudding dinner is done. If we let it cool, we can mix in some cream and sugar to create a wonderful dessert by the name of rice cream. It's all so simple and delicious.

    I would never argue with the chef but that just does not look like anywhere near what my 6 cups of milk looked like. I made the recipe with the 6 cups of milk your recipe calls for and it totally submerged the fully-cooked rice completely and it was so much that the rice could not absorb it and it never thickened. It smelled wonderful though as it was cooking but it was just as if I was cooking plain milk, it didn't thicken at all. I have a feeling that 3 cups would have been a lot closer to correct at least for the white, long-grain rice from Wal*Mart that I used. Sorry, I must have done something wrong.

    nice job jack! I think for me I would temper the eggs at the end. Use a bigger bowl for the eggs and add a small amount of the hot rice mixture into the eggs and stir it and then pour it into the pot. faster
    I do Jaime Olivers version. Omit the water portion and just use milk and simmer it and it's very rich. I use much less sugar too. Add dried fruit when you serve; some even add maple syrup. its good!

    Thank you Jack for showing me how to make Rice pudding. Before your show of how to make the pudding there I don't know her she was not let people know how much of the stuff to make rice pudding. It was Dianna She was very bad of showing. So I like to know of how much and I'm glad you do.
