Instead of corn starch, I temper in an egg yolk to thicken it at the end. The Portuguese way is to also add lemon peel while cooking and removing it when rice is done. *Chef’s kiss* 💋

That nutmeg was a lovely touch on this yummy looking recipe. Ken, if I use Cal-Rose (pearl rice), would the liquid measurements remain the same? It's like arborio rice.

I have never heard of it but I bought a 20 pound bag. It says right on the bag it's "Perfect for Risotto and Puddings." So some of these pepper channels are saying some things will no longer be available, but I can live with this type of substitute!
I've collected about a half dozen or so pieces of Corning bakeware. A little six inch fry pan fell and shattered, and although I only paid a few dollars for it in a resale shop it was very nice.
I have always cooked mine in the milk and sugar and stir it often… then temper inn2 egg yolks. This means I don’t need to use cornstarch. Add vanilla, eggs, nutmeg and cinnamon.
My daughter loves rice pudding and lives in London, buys it from the supermarket. I promised her I'd make one at Christmas, I found a slow cooker recipe. Slice of rice pudding, anyone?
I never liked rice pudding. Mama always put nutmeg in it and I hate nutmeg. My brother could eat the whole bowl. I just didnt like the texture but that's just me.

Very nice recipe! I personally prefer to use egg as a thickener, I also over cook my rice just a bit because I like it to be much more softer.
