- The phrase "deep-fried pizza" might conjure up images of clogged arteries and Texas state fairs. But at Don Antonio-one of Manhattan's most authentic pizzerias-chef Roberto Caporuscio is slowly converting the masses to a Neapolitan classic. Using tomatoes from San Marzano and smoked buffalo mozzarella from Capua, the restaurant's signature montanara pizza is a fried dish rooted in freshness. Thanks to a Neapolitan oven powered by volcanic stone, the fried dough quickly cooks off its oil and grease, leaving a flaky crust and perfectly layered pie.

Boboli did it first, but this looks fresher at least! I've seen pizza dough pan fried in olive oil before putting the toppings and baking, which is essentially what this is. I'd try it for sure.

Here in uruguay we eat this fried dough alone, we do it in a tall cooking pot, with enough oil to sin the dough and not touch the bottom

I've tried small street food versions of fried pizza and it's amazing. It's just the fried dough and then they top it with tomato sauce and grated parmesan. They also puff up and look almost like little balls.
In Naples I've had it like a Calzone, so tomato & cheese is inside the fried Pizza.
You gotta be careful first few bite's it's incredibly hot 🔥.

It has been also a "speciality" in ancient Anatolia from Turkey. The fried flour is called "lokma" or "pişi" in Turkish.
In al Mediterranean area it is millennia that people fries doug, dude. This is true for pizza in Naples too...
We made also soft balls called fried dough pastries.
In this video you can see frittatine di pasta, rice arancini (very common in Naples but more typical in Sicily Island tough), potatoes croquettes and fried pastries.

All I'm getting from the comments is that Scots and (to a lesser extent) Hungarians are really protective of the idea that they made fried pizza.

In india they call this bhatura !! Its served with tangy and savoury chickpea curry !
