Tofu Fingers, Veggie Fritters with an Amazing Tangy Sweet Sauce | Not an Ordinary Sweet Sour Sauce

Crispy and light. This is how I would describe these tofu fingers and veggie fritters. And what make this dish stood out even more is the accompanying tangy sweet sauce. Almost like sweet sour sauce, but 10 times better. I had included two different beverages in this recipe. The first beverage is ice-cold soda water which is included in the batter, no surprise there. Soda Batter Ingredients:
110g rice flour
0.75 tsp baking powder
0.75 tsp salt
1 teaspoon sweet paprika
225ml soda water or enough to get the right consistency
Tangy Sweet Sauce Ingredients:
25g unsalted butter
2 tbsp rice flour
325ml apple cider or enough to get the right consistency
2 tbsp sugar
1.5 tbsp light soy sauce
3 tbsp worcestershire sauce
1 tbsp tomato paste
100g cored mini bell peppers (alternatives: tomatoes, shallots)
Vegetable Mix:
100g Romanesco Broccoli florets
50g sliced white onion
50g shredded carrot
Other Ingredients:
firm tofu
sunflower cooking oil for frying
