Amazing Meatless Tacos Ingredients:
Makes 8 Tacos
2 Cans Chickpeas, drained and rinsed
2/3 cup chicken broth or water
1/4 cup onions chopped
1 1/2 pack of taco seasoning mix or make your own from my recipe

*8 taco shells or 8 flour tortilla shells
(1 tablespoon Olive Oil and 1 tablespoon butter for skillet ONLY if toasting flour
tortilla shells)
Toppings:
1/4 cup tomatoes, chopped
Iceberg Lettuce and spinach combined
Sour cream to taste (optional garnish)
2 tablespoons green onions (optional garnish)

Frying up some diced potatoes is a game changer for added flavor. Fry potatoes first then add other ingredients like meat or these chickpeas. Someone born and raised in Mexico taught me this trick. My kids loved it with cooked hamburger. Makes your dollar stretch farther. 😊

Toast some in the oven with any seasoning you prefer. Made a snack that's crunchy and delicious
You can make a cold salad out of them. Like adding cucumbers, tomatoes and red onion with a vinaigrette dressing. You can even add some kind of grain to it.
There is a really small grain, but I can't think of the name of it right now, Hugh. Just type in chickpea recipes here on RUclips and you should get alot of ideas.

Hey Pam! Great recipe. Have you ever had potato tacos? You'd take the corn tortilla and warm them in a pan on low heat until its foldable and stuff it with soft potatoes like potatoes O brien or cubed breakfast potatoes with whatever seasoning you like, sprinkle some cheese, fold, let them get warm in the pan and they're good for breakfast. Maybe add some scrambled egg or a bit a Chorizo which is Mexican sausage. Delish.

We have had garbanzo bean burritos similar to this. And you’re right, you can’t tell that it’s not a regular taco.
We haven’t put the additional ingredients on. That’s a good idea. But we use coleslaw mix for the crunch instead of iceberg lettuce.

Interesting idea. Frijoles Refritos (refried pinto beans) would give a different taste and texture, but the idea with chickpeas is making me curious. I like the spinach addition. -- I wonder if adding strips of roasted poblano peppers would be good in this. But mm, Pam's recipe is simple and sounds tasty. I keep coming back and getting recommendations, so I've subscribed recently. Thanks, Chef Pam.

You mean like grilled peppers?? That would be good. You could chop them up and add them to the chickpeas. Or even add Jalapeno's.

*Making a 7 Layer burrito with them would be good. Like Taco Bell used to have. That's all I ever order from there. Now I have to get them to make a regular burrito into a 7 Layer. It's not as good, but.....*
*Or you could make Tostada's with them. When I was going to beauty school there was a Mexican restaurant next door and that was my go to lunch. It was good and cheap, (at that time anyway). They fried the corn tortillas to be crispy then added refried beans, cheese, lettuce and tomato, then add another layer. They were so good.*
Delicious!!!!! I’ve used chick peas to make vegan tuna salad. You drain then mash up the chick peas and add Nori flakes, then add whatever else you normally put in your tuna salad. If you can’t find the flakes you can get the seaweed sheets used to make sushi (you can get them at Walmart). I cut the sheets and blend them up into a powder in a expresso bean crusher. This gives the chick peas a tuna taste. Or you can use chick peas to make egg salad. All the ingredients you normally had to your egg salad and had Himalayan Black salt. The black salt has a natural egg taste. Not sure if Walmart has it but if you have a Indian grocery in your area they will definitely have it.

I’m late late to this party but after seeing how easy this was I made an early dinner of this because I love chick peas (or garbanzo beans whatever ya want to call it🙂). I didn’t have small tortillas so I used a large one and just cut it in 4’s now that I think about it I shoulda made chips. Anyway, this was so good! Loved it. I’ll be eating the left overs til they’re all gone. Hehehe
Fried Taco shells are the best. My family & friends won't eat them any other way now. Used your home made taco seasoning too..Mmm good, thnx Pam. 😁

Thank you for this recipe, I never had chick peas. I think I have seen them on a salad bar ( been awhile since I ate at a public place). I wonder if I could use salsa instead of cream cheese 🙏❤️

Is your finger throbbing.....hope you are feeling better. Just wanted to say I used the aquafaba egg substitute you suggested for biscotti and it worked great. I could not tell the difference. The smothered chicken is my current favorite and I have made it two times. It is delicious comfort food. Hope you are feeling better--the mandolin did always seem too risky for me. Do you have any ideas on sweet pickeled cukes and onions...or how do you make your vinegar cukes and onions? Best wishes for feeling better soon and a speedy recovery.

I love chick peas. I have never thought of using them for 🌮 s. The Trulys are meat lovers too, but I am trying to incorporate vegan/vegetarian meals throughout the week. You can use them to bulk up your ground meat and increase the number of servings with less meat.
