Bun Bo Hue - A Vietnamese Food You Must Eat

    Among the long list of Vietnamese food is a famous dish known as Bun Bo Hue, and although it may not be as well known throughout the world as pho, I personally, probably like it even better - bun bo Hue is a dish you don’t want to miss eating when you’re in Vietnam (or even at a Vietnamese restaurant). Although bun bo Hue is originally from the city of Hue, located in the central part of Vietnam, you’ll be able to find the dish all over the country, and it’s especially popular throughout Saigon, available as both a street food and at many shophouse style restaurants. Although I haven’t yet been able to taste the bun bo Hue in Hue, when I was in Saigon, I had an amazing time trying it at a restaurant called Bún Bò Huế Chú Há.
    Bun bo Hue is a beef based noodle, and at this particular restaurant my bowl of noodles came with a nice handful of spaghetti sized rice noodles at the bottom, topped with a nice hunk of tenderly stewed beef shank (I think that’s what it was), a few slices of beef, some pieces of Vietnamese sausage, and then a scoop of the broth, a rich concentration of beef stock mixed with spices, herbs, and seasoning. Finally, to top things off, my bowl of Vietnamese noodles was finished with a handful of freshly chopped green onions and thinly sliced white onions. Along with a delicious bowl of noodles, one of the coolest features of eating at Bún Bò Huế Chú Há was the clear bowl that the noodles were served in. I have to say that in all my years of eating noodles in Asia, I think this was my first meal served in a clear see-through bowl. It was nice to be able to see all the floating goodies below.
    After taking about 10 minutes worth of photos before eating or making this food video, my bowl of noodles was cold. So the kind owner of the restaurant grabbed my bowl, threw out the soup, then re-filled it back up with hot soup, and also added in an extra handful of onions on top. The service and hospitality at this bun bo Hue restaurant, and also for many restaurants I ate at while in Saigon, was extremely kind and generous. Just like nearly all Vietnamese food, one of the best things about eating is all the side vegetables and garnishes, which in this case included a nice plate of lightly blanched bean sprouts, morning glory, and banana flower blossom. Along with the partly cooked vegetables, there was also a nice basket of both sweet basil and sawtooth herb, both of which contributed a nice fresh herb flavor to the noodles. And let’s not forget about those wonderful sliced Vietnamese peppers, not only are they pretty spicy, but they have a nice flavor to them as well.
    Ok, so after topping my bowl with all the garnishes, I was ready to dig in. The bun bo Hue was extremely delicious. The noodles were soft, yet slurpy and the broth of the soup was citrusy, lightly spicy (and more so with the extra chilies), and just had a wonderful undertone of long boiled beef stock flavor to it. The pieces of meat included in my bowl were also all delicious, from the sour piece of sausage, to the hunk of beef that literally slid off the bone as I picked it up.
    Again, unfortunately I wasn’t able to visit Hue on this trip, but I did have a wonderful time exploring the Vietnamese food available in Saigon, bun bo Hue being widely present and a local favorite not only in Hue, but also in Saigon.
    If you’re interested in going to the restaurant I went to, the food is good, the service is wonderful, and it’s located in a nice convenient location pretty close to central Saigon, here are the details: migrationology....

    I was traveling from the north of Vietnam to the south via bus and I had a 4 hour layover in Hue. I decide to get lunch before my bus left at 1pm. I approach a typical corner street food restaurant with no expectations of what was to come. I order the only thing even on the menu. I didn't even know the name of what I was ordering. It took only one bite to realize I was eating the greatest soup I had ever had in my life. The soup? Bun Bo Hue.

    1- It is rice noodle, not vermicelli noodle.
    2- It's not nem (fermented meat) but chả (a kind of boiled pork cake) actually.
    3- The broth contain beef & pork stock, shrimp paste, lemon grass, onion, pineapple (optional)

      Freddy Lon They use pineapple to tenderize the meat. Originally, Bun Bo Hue doesn't have pineapple. I, personally, don't like to add pineapple in my BBH, the flavor is gonna be slightly changed doing so. ^^

    Mark Weins, bún bò Huế was originated from Huế. Soup base is lemongrass, chillies, garlic, and shrimp paste to get that flavor. Meat is beef briskets with tendons & pork feet and pork cake or sausage as you said. Yuy, I love that stuff, so good. You really enjoy food. Love your expression.👍😃

    Mark, that chunk of meat is actually pork that comes from the leg/foot area.

      Mark Wiens yah....that's the feet. ^^. This dish is called also by another name : Bun Bo Gio Heo, and Gio Heo = pork hock. ^^

      Its because the soup is simmered in beef bones and such. They call it that because its a beef based soup for the noodles

    My mom knows how to make this but she rarely does for my family. I love it more than pho. I'm not good at speaking Vietnamese compared to when I was younger so I never knew what this was called to request for it. Now I know lol. Thanks for the video and love your enthusiasm for food!

      Bun bo Hue does take a lot of time to cook ,3-5 hours simmering, preps is 30 minutes. It’s not too difficult to make. There are lots of Bun bo Hue recipe on RUclips. Just in case your Mom doesn’t feel like making it. You can ask local Vietnamese where is the best bun bo Hue in your area is a faster way to enjoy the soup. I know this is an old post😀 hopefully your Mom made the soup for you already

    This is my favorite vietnamese soup ever mark. Everytime im at a viet resturant i already know what to order bun bo hue. Hehe i started out with pho and then alot of my vietnamese friends in particular notice i like to add alot more chillies or hot sauce in my soup. I then got introduced to bun bo hue. I cant go back to pho now, i love bun bo hue. :) :)

    Hey Mark Wiens , this is just some information I wanted to share and thought you might wanted to know, the "Bun Bo Hue" (BBH) that you enjoyed really is trickled down version of the authentic one, and made for the southerner's tastebuds. Also, if not all "BBH" base for the soup consist of lemongrass, pork & beef bones, so really its not an all beef affair here. The base should have an umami-like taste, with all sweet, savory, spice & a light tang, not "citrus" like you've described.
    Anyhow, the "chunk" of meat that you enjoyed is actually not beef, it was just a pork hock. The sausage is not fermented, it's actually just a regular Vietnamese style pork-ham that you find in our "Banh Mi" as well, but this one is just prepared in the "Hue" style. The beef that they use should not be "grizzly", it should be tender with just a little chew and texture like the sirloin that the original one would use. I know that you enjoys thai-style level of spice, but holy smokes that is really a lot of pepper flakes, and pickled pepper you put in, i suggest that if you could tone it down a bit to really enjoy the umami-ness of the soup that I'm afraid that it was over-powered by the peppers.
    Overall, I'm glad that you enjoyed the dish, and $60,000 VND for the dish? That's a good bang for you bucks. I hope next time that you get to enjoy the "authentic" style of this amazing dish. Happy Eating!

      Same. I noticed some of the same things. I live in California, I’m a large city with lots of Vietnamese people and this is one of my favorite soups of all time. My parents are from Mexico and I went on to be a chef. I LOVE bold, funky, fermenty, seafoody, and squishy textures. I love the pork hock but I hope to visit Hue soon. My kids are 10 and 7 and they’re already obsessed with Vietnamese food and want to visit! For being so young, they’re very money/price/value savvy and they Cannot believe the prices for bowls there!! With we had slightly cheaper prices here and smaller portions so I can order a bunch of things! 😅 A bowl here is around 17 USD before tax &tip.

      ma za Pig's trotters are my new favorite dish. There's a Shanghaiese joint in the Shibuya area of Tokyo that does peanut-sauced, smoked trotters for about $4. Amazing!

    Mark, As I watch these videos, it's amazing the misconceptions that most westerners (including me) have of Southeast Asia. I would never have guessed that Vietnam Myanmar, Thailand, etc., have such a wealth of healthy, locally grown food that is prepared with such care and in a tradition that is rich in cultural history. I've seen you eat dishes in back alleys of little known places that make most of the 'popular' food sold here in the U.S. pale in comparison and for a fraction of what it would cost here.     My favorite noodle dish. The citrusy flavor is lemon grass. The broth is cooked in a bunch of it. Also the chunk of meat is ham hock, pig's feet.

    The Pork cake you ate in the video that is Huế's style Moo Yo .The broth contain : pineapple,shrimp paste, lemongrass, beef and pork bones.

    That looks wonderful! My family are soup fanatics, so this is right up our alley. My six year old about swooned when he saw this because his favorite food the whole world is Pho, but he liked the looks of that broth.

    Mark, the next time you’re in Philadelphia, you have to stop at Cafe Diem for their Spicy Bun Bo Hue. I could eat this dish for every meal for the rest of my life!!
    They have a couple different cuts of beef in it, a decent size pork hock, and tendon. One taste of the spicy broth and you’re hooked. I always order a side of extra tendons.
    As always this was a great video. And that lovely woman who made your dish was a sweetheart for making you a fresh hot bowl.

    Mark Wiens, great video. I love this dish also, i think stands up there next to Pho. U mention that the meat were beef, coz the name of the dish is Hue Beef Noodle Soup, but those meat are actually pork. Heheh

    Dude, $2.76 for that kind of meal and especially for that kind of service is amazing, I literally want to visit Vietnam just to go to this restaurant for this dish.
    In America you can't really get any quality food like this for $3, the most you'll get is a simple boring hamburger with nothing on it, I just love how much consideration goes into the food itself, and you can tell that woman really did help make it the perfect dish for a specific customer which isn't something very many American restaurants will do.

    It appears that there are 2 types of bún bò huế:
    a) authentic bún bò huế has a clear and elegant broth that you do not want to add veggies,
    b) southern bún bò huế has huyết (pork blood) and a darker and flavorful broth that you may want to add veggies.
    The above video shows a southern bún bò huế with lots of minced lemon grass (sả).

    Very few foreigners are able to tolerate the taste/smell of fish sauce and soy sauce. It's nice that you can :)

      Many can tolerate soy sauce I would say. Here many people would relate the smell of fish sauce to spoiled rather than "yummy lol it's not really their fault.

      I loooove the flavor of a good fish sauce. But it has to be good quality. One of my favorite Vietnamese dishes is actually Bun Mam. Most foreigners like me can't take it but I love it

      +Athena Ngoc Nguyen My parents brought my brothers and I up on the saying "You can't say you don't like something till you try it!" so I grew up eating Vietnamese, Thai, Indian etc. I love fish sauce and soy sauce and I would love to try this. It looks amazing!

    Hi Mark, I also went to Saigon in Dec last year and had Bun Bo Hue at a place called Dong Ba in District 1. It was great. I like it even better than Pho.

    Mark Wiens Let's come to Hue city! The original place of Bún Bò Huế
    There are a lot of twists in that bowl, eg. we don't use chilli flakes we use fresh chilli to taste and there would be a diverse vegetable side dish, AND for sure you're gonna be taken a huge wonderful crab patty inside your bowl!
    Just come here and feel the different!

    Hi Mark, I'm glad you're currently in Vietnam! The citrus you're tasting is indeed pineapple. I believe the meat loaf thing you ate is cha hue (Vietnamese meat loaf but Hue version) not nem. Also, with bun bo hue, you can ask for extra sate and that'll give your bowl an extra kick of spice! Will you consider trying Bun mam? It's another noodle dish but the broth is made from pork and fermented fish. The fermented part sounds scary, but it's a delicious bowl of goodness!

    They make it spicy just right on fridays in Montreal QC, if you pass by go to ''Pho Bac'' on St-Laurent Boulevard, subway station is Place-D'Armes on the orange line ..

    Hey Mark! I just started watching your travel food videos starting from your travels in Vietnam. I'm Vietnamese myself and I've only visited once when I was younger. I do very much appreciate all your videos and cannot wait to make a trip to Vietnam again. The noodle soup you're eating is something I'm very familiar with. The big chunk of meat you're eating is actually a pig's foot and the "fermented sausage" is called cha gio or cha lua which is a vietnamese pork sausage, the same thing you had on the side with your banh cuon. Anyway, I'm glad to see you're enjoying the cuisine and hope to see many more videos soon!

    Hey Mark you have to try Bun Cha Hanoi (the Northern version) even in Ho Chi Minh City. I've looked up a few places for you online that you can pick and visit if you're still in Vietnam and while there (in the restaurant) you should also try the Northern style of Nem (rice paper fried spring rolls) if they have them on the menu.

    i think if you've stand the chance one more to taste it, you should be add the "garlic pickle" and "chilli - fish sauce pickle" (vietnamese call it is "tỏi ngâm chua" and " ớt ngâm nước mắm" ) into this one, i believe that you'll love it more than when you savor together (noodle + beef + chilli - fish sauce pickle + vegetable + garlic+ some consomé >> that's so yummy hehe)

    @markweins just a heads up for the next time you are in vietnam, traditionally when you grab things from the middle of the table use the back side of your chopsticks. Keeps things cleaner and shows respect.

      Yes, totally agree!!! I was SHOCKED the video seemed to show Mark stick his well used chopsticks into a community condiment. Mark KNOWS this is disgusting, unsanitary & just plain rude in most cultures/countries...so I will give him due credit... he is normally very polite & courteous. Maybe the video was edited (if he grabbed new sticks?) OR he was just too distracted to realize he ruined the chili for everyone after him? We use a condiment spoon or, at a minimum, the clean end of chopsticks even when sharing a meal at HOME. Eeew. Call me a germaphobe, but this reminds us why eating out has its risks along w/ its many pleasures. I can't whip up a tasty pot of BBH each time I crave it, unfortunately. Immune system, please hold strong for your cooking-averse food lovin' momma!
