I love watching your videos before I sleep since it's very therapeutic for me. You're one of the few people, (besides Anthony bourdain) that I enjoy watching. You are authentic and original, plus you're facial expressions are HILARIOUSs. Most of the cuisines in your videos remind me of my grandmother's cooking and the times when I traveled and ate A LOT of street food. I'm both Burmese and Vietnamese so I've grown up eating lots of food and exotic fruits . If you ever get a chance, there's this really cool place in Virginia called Eden center. I think you will enjoy the similar authentic Viet and Thai style cuisine. I also think it would be an awesome idea to make food videos in new places, and I'm looking forward to it !! I would suggest Israeli cuisine-I've been to the markets in Jeruselum and there are many little food stands selling a variety of fruits , Ruglah (oh you should definitely try the ruglah!! It's like little chocolate pastries) and so much more. I've encountered small food courts that cater really nice sauteed lamb pops and traditional falafel . Secondly (sorry if I'm going on too long), I really think and HOPE you will consider making maybe a candy video??...or even a chocolate review. I'm a chocolate lover, but I don't know if you take any liking to candy and those sort of things. But yea, you're doing such a great job, and it's amazing how you're doing what you love , which is really inspiring !! :)

Holly, do you know where this restaurant is? Every time I came back to Saigon, I ended up staying right behind Ben Thanh Market and ate the only Oc street restaurant on the one side of the market. I think that restaurant only opens at night. Service is not so good and way overpriced. I used to be a Saigonese but have not been living there for about 24 years so I really don't know where to get specialty food anymore. I am an escargot lover so if you know a nice escargot restaurant, please let me know! Thanks so much.

The whole street sells "Oc" so you can choose any you like. Or other place I often visit these days is "Oc Khanh", on Nguyen Binh Khiem street, in district 1. Come visit if you have time! Oh, and welcome back to Sai Gon after 24 years (while i'm just 22 years old).

The big snail with lots of chilli on it called ốc tỏi. Glad you enjoyed it, your face at that moment looked like you were in heaven, and I make that face everytime I taste something really good too haha. Also, ốc tỏi is my favorite :)
This video actually got my wife interested. She wants to do the scallops like that next time. Interesting about the morning glories. Looked it it. The flowers look just like the US version but they were plants instead of vines. Will try to look them up at the Asian market next time. Thanks Mark.
the morning glories are also called water spinach, ong choy, or rau muong (in vietnamese), it tastes awesome stir fried with garlic and some hoisin sauce

you should keep the shells and boil them to sanitize them and then leave them on beaches with wild hermit crabs. There is a a shell shortage going on in the wild right now and the crab population can't grow bigger than the amount of shells available. Every little bit helps.

I really love Mark's food videos. I've never seen anyone as focused as he is on the task at hand, tasks that involve food and often times in an evioronment that's very distracting. Kudos to him. I think that focus sets him apart from others.

actually, in vietnamese, we called "snail" like the ones you got in France is "ốc sên" which are actually no one would eat them. the "snails" here cuz Mark got no English word to describe what it is - it's actually called "ốc", they live under water, unlike "snails" obviously or "sò" (it's like "clamps" but we got a lot of types) and we have various types of "ốc" : ốc dừa, ốc gạo, ốc len, and sò huyết, sò lông....etc. - they are clean and healthy, unlike "ốc sên" aka "snails" though - they are kinda ewwww i know, LOL xD
Now my mouth is watering... Ốc is my favorite, gotta eat it every time I come back to Saigon. It's impossible to eat those here at the US, cuz finding fresh Ốc (you know that fresh ingredients are crucial when it comes to shellfish cooking) is extremely hard (and not to mention they are super expensive). Anw, glad that you have some more good experience at my hometown ^^

hey mark :D ask them for a ginger fish sauce dip next time ( contains tons of ginger and is more dense than the normal fishsauce) , it goes amazing with the kind of snails and scallops you had
Depending on what kind of snail you have, then you can dip in ginger fish sauce. For some, you just use fish sauce without ginger. Also, Mark, if you could add some fish sauce to the scallops, they taste even better. And they added some green onions with oil, not butter. Anyway, thanks for the video, making me crave for those snails. I am going back to Vietnam this New Year so I can enjoy them :-)

you can have anything to your taste, cocacola, pepsi, 7up, sprite, tea, sugarcane juice... but you should have it with ice. I also like "dừa tắc" it's coconut water with 'tắc" (I'm too lazy to look it up, but it's a relative of lime) this drink makes my mounth feels fresh especially when you eat oily dishes like grill, fried food....

***** I was referring to the ones with spiral shells, those are from the sea and are called "luo" in Chinese and snails "woniu 蝸牛“ are living in soil. Hard to believe but we don't eat snails while "luo" is considered a delicacy. Maybe they are called sea snails in English? I don't know.

Why do you call these snails? They are different kinds of shellfish. We call these "luo螺" in Chinese.

***** I was referring to the ones with spiral shells, those are from the sea and are called "luo" in Chinese and snails "woniu 蝸牛“ are living in soil. Hard to believe but we don't eat snails while "luo" is considered a delicacy. Maybe they are called sea snails in English? I don't know.
