    Thanks Natasha. Do I have to peel it? Is the taste affected by skin on the roots?

      I don't peel it, because, that's wasting it. I soak it in water for an hour and then wash it , to get dirt off.

    Omg Natasha you know how to make it the old fashioned way, I'm going to make some for my friends in the UK for valentine's day . But I will make it pink. I will make the old fashioned in summer when we have some sunshine 😃🤣😂😃 I'm celebrating Carnival, Christmas and Easter. Trini love to party.

    I like this technique but I don't think you have to peel the ginger. Maybe you could boil it down and add enough sugar to keep it as a concentrate? Then add a few tablespoons to a full glass of water whenever you have a taste for it.
