    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

      im not even a chef but i love beef and i could see where the filet was in those pictures that were in question. if they were ribeyes they are missing the best part that wraps around the outside filled with good tasting fat. maybe he just flips burgers

    Not a chef, but i work in a meat room at a grocery store. This is pretty much exactly how we do it, but just we wear gloves and use pads instead of papertowels. I don't think that looks like a ribeye at all. Interestingly enough, people argue with us that it's not filet mignon too. No matter how much you explain where a cut comes from, they do not listen or accept it.

    Wanted to thank you for getting me involved in japanese cuisine. I recently bought a sushi kit from a asian supermarket and have made my own sushi rolls along with tempura recipes as well. One interesting thing i noticed is i need a very sharp knife for cutting the sushi roll! Other than that, i am making lobster tempura and experimenting with different ingredients in my sushi rolls. Thank you so much for your knowledge and expertise.

    Hiro is by definition a professional. He is paid to do what he does. And when you do what he does every day for the last X years, who are you to question his judgement?
    If you have an important response to something, make a video and tell your story.

    I went to Miami recently (I live 1000 miles away) and we made it a point to go to NoVe because we love these videos. Chef Hiro was not there and I kept listening to everyones voice to see if I could spot the camera man. No luck finding either one but I had one tasty meal.

      George Vanderbilt -we ordered several dishes to get sort of a sample of everything. I had Tuna Tataki for a starter, a Crunchy Crab Salad, Calle Ocho, the Dragon roll,Salmon skin, and last but not least Pacific Bay.

    It's good to see your face at last Mr Cameraman! And watching Hiro-san prepare the fillet reminded me of the times my Dad would bring home a whole sirloin. He worked for a semi civil-service organisation that dealt with all aspects of meat production here in the UK, and this would include butchery. The staff of the organisation would be allowed to purchase basic cuts at greatly reduced prices, hence Dad coming home with a whole, vacuum bagged sirloin, which Mum and he would then have to cut into steaks. When you see those little plastic wrapped bits of steak in the supermarket, you don't realise just how big the whole thing actually is!

    Nice to see this. Too many people think they know all because they have been/are in the business. I use to have to break down 8-15 of these everyday for the steak house I worked for and it's funny when people only know the cleaned filet they see. Great video.

    In culinary schools across North America, learning about butchering meat is a certain percentage of the course. I know that that is a fillet mignon. In certain collages in North America, there are courses on butchering. Thanks for another great video.

    I would like to ask Hiro if he has any recipes on preparing deer meat. We always have plenty of deer meat in our freezer. I have sausage made mixed with pork. Which is very good. I make stew out of the meat. And it makes wonderful ground meat. But I’m looking for something different. We are all tired of all the ways I’ve listed. Hiro is such an awesome chef I’m excited to see what he can come up with. Oh and by the way it has to be cooked. My family will not eat any type raw meat or fish.
    I love love love your videos. Thank you for making them and sharing with us. Hiro you are a true rock star in the kitchen.

    When it's broken down,the fillet mingon is the center cut off the tenderloin. That is after the the chain, and the smaller parts age removed.

    Yo dawg I live somewhere in Canada and don't dwell in food culture but hell, I honestly just randomly found you from watching some game related vids lol dunno why but I really enjoy your vids, have been watching for awhile now. I'm not one for being awed by meeting someone I've seen on tv or anything but I'd be dumbstruck to meet you both. I would probably not be much company though lol but yeah I love your vids and I'd enjoy the hell out of myself to eat whatever the hell Hiro whips up.

    I only ever worked 2 months as a cook. But trimming our beef fillet and cutting it into perfect portions was something I got good at quickly. Can't say quite the same about pork tenderloin -_-

    I would love to come out to Miami and see you guys! I've been a fan of the show for a long while. Don't listen to idiots who say dumb stuff like that. Im 15 and I can quite confidently say he more than likely gets his fillets pre packaged in the tiny round fillet cuts.

    I cook the the fatty parts on the grill and make steak soup the next day, great with barley or bulgar wheat added to the soup, earthy and smokey.

    The best cut is definitely the Hanging Tender. A full Cow should be a Hanging tender.
