Octopus Ceviche - How To Make Sushi Series

  • This week, Master Sushi Chef Hiroyuki Terada shows you how to make our Octopus Ceviche which is very simple. Most all of your ingredients can be found in your local supermarket, with the exception being Yuzu juice, which is a Japanese fruit that closely resembles a grapefruit. Instead, use lemon or lime juice.

    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

    Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

      +illudian I use a Frost Cutlery knife to cut with. Sharpness is what counts. Higher priced knives are made with higher quality steel so they hold an edge better and last longer but you don't need an expensive knife to make great sushi.

    I watch all these regularly. I work two jobs; I raise two boys alone. The kitchen is my personal temple. I have chemical imbalances that make it hard to relax; besides cooking, I find additional internal solace in watching masters at work - of course, cooking is preferred. Your videos are superb. And I find Hiro's nodding very calming. I haven't commented before. Just wanted to say thank you. If I ever make it down to Miami, I'll be sure to get a meal and visit with y'all at NoVe :)

      Watching "Your Last Meal (07/10/16) w/ Aaron Lau from Sushi 10 now. I'm only 4 hours from the coast, yet it's so hard to get genuine, fresh (not frozen) day-catch stuff like this around metro Atlanta for some reason. I can make these at home if I could only source the ingredients (Catalina Offshore notwithstanding... too expensive and wrong coast). If you know any reliable suppliers who ship to any fish market daily in metro ATL (Atlantic or Gulf; either's fine), I'd love to know. I want to feed my kids seafood - of which they're rather skeptical, as tastes and textures go, because... kids... - that I trust and can manipulate for adult AND children's palates. Let me know! Regardless, I'm LOVING this video. Aaron is incredibly talented as well. I love seeing you and Hiro excited about other people's food. (And btw, the Taco Bell "Will it Sushi" is something I plan to recreate with the kids - who are obsessed with T.B. - and record/post to Facebook, lol.) You guys are the BEST! Thank you :)

      +Hiroyuki it's a little more difficult to source than I thought. There's plenty of fresh shrimp coming in, but things like tuna and salmon are almost always frozen (or $50 for two portions worth, lol). I'll keep my eyes open, thank you! And sure, when we do the TB rolls, I'll share pics :)

    I served 20 years in the Marines Food Service and retired as the Food Technician for 1st Marine Logistics Group. During my service I spent 2 years in Okinawa Japan and worked with many Japanese Chefs. And, I want to say that this dish was prepared in an excellent fashion. The presentation was beautiful. You are definitely a Master Chef. I salute you.

      Karen Ramirez you should really try it sometime it's orgasmic. If you find the right place that actually cares how the food turns out after it's cooked and all sea food should be cooked precisely with certain oils not this pressure cooking or deep frying like in most places. Give it a chance and see u'll love it

      most grocery stores will have these ingredients. or you can go to whole foods

    im agree about the cuisine evolution but I don't see anywhere the CEVICHE. please change the name
    Many places in latinamerica has in their dairy meals Ceviches with tons of diferents mods, type's of see food and vegetables but always one of the principal ingredients is the lime or acid to have a maceration. and never the protein is cooked. in that case's the dish takes diferents names. as ensalda, vuelve a la Vida, cocktail, campechana, etc.
    I love octopus and seems to taste good with the souce that Hiro made

      I'm Peruvian, where ceviche originated from
      And I can tell you for a fact that is not ceviche, like you said it is normally macerated with lime juice ,
      Original ceviche is the fish, haven't found the right one yet but I've tried tuna , kingfish , dolphin , mahi , dorado ect.... But it is usually marinated with what is called " leche de Tigre" which is the lemony juice Wich the fish is marinated in, followed my purple onions which are marinated the same time as the fish , and choclo which is a kind of maize , cilantro and some sour oranges.... And last but not least the rocoto pepper paste to spice it up , and inca cola and some nice salty cancha!!

    I apologize ahead of time for the likelihood of sounding so critical, but is it possible to just let Hiroyuki do his thing without all the commentary? I'm sure you're well meaning, but to me you sound like you're talking to a child instead of a master Sushi chef. Constant questions and your need for the most mundane explanations, are annoying and distracting, making the videos like repeated reminders that you are his boss and we viewers are idiots.
    Why not just introduce the food, the technique, whatever, and allow him to do his thing with only minimal comments? I understand that he is not inclined to being talkative, but that is the beauty of his craft. Otherwise, with your constant questions, your never ending need for him to explain every little thing, the videos really lose the effect, the reflection of just how great he really is.
    With all due respect. I do love what you are doing here.

      I appreciate the cameraman guiding hero knowing his lack of English skills. The one thing I don't appreciate it's what he tells him how much to put in something or how little to put in something hero is the MasterChef and should be honored that way

    This souldn´t be called ceviche. The best ceviches are latins. And have a lot more of ingredients like tomato, pepper, cilantro, lemon juice, etc. This is just an octopus salad, but it isn't ceviche.
