I've got a "gluten sensitivity." I'm 90% sure it has nothing to do with gluten and everything to do with glyphosate. It's one of the reasons many people with gluten sensitivities can go to other countries where glyphosate isn't used and consume gluten without issue.
What I need clarification on is why reactions seem to be specific to gluten.
Have you tried making your own bread at home? It’s possible to find flour produced without glyphosate. I have an issue with flour, but after going through a long elimination diet process I learned it’s the fructans that were making me ill.
I have this, as well. I used to love eating wheat and had no problems, now at 33 I have been forced to eliminate it from my diet. Some things I have learned:
1. About 25-30% of the population has a gene linked to Celiac, yet only 1% of the population has Celiac, but everyone who has Celiac has a gene for it. This indicates that the gene is required to develop the disease, but what about all of the people who have the gene yet no official disease? More scientific research needs to go into investigating this. One theory is that because it is a disease of degeneration, over time all people with the gene might go on to develop an intolerance, but for some it would take many years because they have a mild case. I fall into this category, and while nobody in my family has been diagnosed as celiac, across 4 generations there are 6 of us who can no longer tolerate gluten. Obviously something is going on!
2. Gluten is only one of a multitude of very complex compounds and structures found in wheat, rye and barley. Grains are really complicated plants, made only more so by humanity's thousands of years of cultivation. The wheat grown today (especially in the US) is nothing like its original grass form. Way higher yield, way more gluten, etc. Gluten itself is a chemical bond when the proteins gliaden and glutenin are exposed to water and thus form a disulfide bond structure. It's basically glue. This is why wheat paste is used to adhere unlike materials. (Ever try to rip off an old band poster from a metal stoplight pole? Yea its impossible thanks to wheat paste!)
3. When glyphosate and other industrial chemicals are used, they are causing damage in and of themselves. They're breaking down the cell wall in our gut lining, damaging our villi and creating gut permeability. What this means is that even if you normally would otherwise be able to tolerate gluten, now that gluten is able to invade your gut lining in a way it's not supposed to. This has the downstream consequences of reducing nutrient absorption and causing inflammation.
4. Gluten sensitivity is real, and it has real symptoms that can be serious. That said, it is still different from Celiac, as the latter is an auto-immune condition which mounts a systemic inflammatory response. The autoantbodies that are produced as a result are far more damaging to the gut. Someone with decades worth of damage from being an undiagnosed Celiac can have permanent scarring on their intestinal walls. No amount of gut healing and gluten-free diet will ever get them fully back to baseline. On the other hand, those with gluten sensitivity CAN heal their gut over time and eventually go on to be capable of tolerating small quantities of gluten. This is why after years of being gluten-free, some people say, "Oh I ate croissants in France and pasta in Italy!" They would likely have been unable to do so back when their gut was in a very damaged state.
Get tested for food allergies. Also, you may have issues with FODMAPs.
It’s amazing how much they speak of gut issues but ignore them as a main issue for things like gluten “sensitivity”. They have weakened our guts for generations now since the beginning of the industrialization era (mothers with weak guts begetting children with weaker guts) coupled with insane greed. So much greed that who cares that real bread doesn’t have all the chemicals in it, it just makes it quicker and people don’t have time to make their own bread or food anymore. Due to these things we aren’t as aware of what we are really eating and don’t have time to care and cling to our “genetic” illnesses cuz science says so and it takes the responsibility off of our own choices. Then someone finds time to travel and they see things are a little different and they don’t get as sick when they eat foods from other countries. The madness and chaos is what makes things worse, because we are too broke to pay attention to own ourselves.
if you have a gluten sensitivity(not celiac) you should check out the European breads and learn about the Chorleywood bread process. North American bread isn't fermented the way most breads used to be.

Im a young lady still in high school and I peer pressure my friends to eat more meat, dairy and eggs like me. They cant even donate blood their iron count is so low, its horrible.
This is the most effective podcast I've seen about nutrition. I really appreciate how Max shows the obviousness of the necessity for us to eat as humans.
eating meat doesnt mean having it everyday. there is a moderation for meat and the way we eat it now is definitely not it.
@@rednarok It's likely a matter of quantity as much as it is of frequency. Furthermore, many of the issues with meat consumption come from people consuming processed meats, as well as from the cooking methods. On that note, it's rather weird that I have come across dozens of studies of "red meat + processed meat consumption" downsides, lumping them in the same category and resulting in a "red meat is bad" conclusion, but not a single one that focuses just on red meat.
true, its kinda like the situation where most people who use a lighter in their pockets get lung cancer, but untill we dont have better studies im still on the side of getting rid of the cigarret and the lighter until we prove that the grass fed healthy cooked meat isn't bad for you.

First question from my midwife: do you eat meat?
I do-asked her why? She said best indicator of successful pregnancy with minimal complications. Even then-was recommended to look at an old diet called the SPUN diet which advocated eating meat daily plus 2eggs a day plus organ meats once or twice a week.

What a fantastic conversation. I learned so much. My mom has dementia and it’s a terrible disease. I have PCOS, insulin resistance, hypertension etc. As a child, I ate what is now considered not healthy. Mom was the cook. As an adult, ultra processed foods is not allowed in cart or house. Everything is as freshly made as is possible. I follow you and have read everything you wrote. Thank you for sharing this conversation. ❤

I haven’t watched this yet but at the start of the year I switched to a strict Mediterranean diet and haven’t looked back. My mood is better, I have more energy and it even cleared up my skin.

@@Odthean yes, there is a huge difference in the pasta they use in Italy and the pasta they use in America semolina wheat is far healthier than whatever wheat America uses.
Macronutrients and micronutrients is a bio individual thing. Quality is important. Vote with your dollar. Support local, regenerative, and organic farmers as best as possible. Eat whole nutrient dense food. Eat the rainbow for YOUR body. If you having sweet cravings-your maybe not getting enough protein and/or fat. Changing my diet. Changed my life
For years I have been in health and wellness world specifically bodywork, yoga, and Ayurveda. For years I was told by some they think I have gluten issues. I didn’t believe them. I was plant based too. I had severe chronic pain and depression and more. Gluten was kicking my arse. Leaky gut for sure. I have NCGS. Non celiac gluten sensitivity. Gluten attacks my brain, spine, ribs, knees, nervous system. Now I order my burger triple patty.
I work in an American restaurant and the customers who primarily buy pastries, muffins, and deserts are not only visually unhealthy but they also need extraordinary amounts of help understanding how to use the credit card reader etc. It is way too consistent to be a coincidence.
Allow and teach people, not regulate them.
I personally like the idea of taxes on unhealthy items because those people then put a strain on the medical system in the future. Now where that money goes is another discussion

3. Apart from preparing spiritually, what else should we do? - food?medicines?
4. What will we be expecting (realistic speaking here, all i see is death, death, death the most horrifying way) . How can we have hope since we r expecting death.

I had covid which made my sense of smell and taste disappear for nearly a year and as my sense of taste was returning, I was able to "sense" though not taste sweet and salty. My doctor suggested that we are born with those two tastes while sour and bitter are "learned" or developed after the ages of 3-5 years. So yes, sweet and salty are two flavors that are very primal and necessary for our physiology for fat production as well as other processes.
My sense of smell returning was and still is more precarious even after go on 3 years since recovering from covid. My doctor also suggested that women in my circumstance may have their smell return sooner than taste.
Also, I will say, that covid may have taken away these two senses temporarily but once they had returned, I favor less processed food than before.

I just bought a bag of Skittles today.
The increase in Alzheimer's risk for apoE4 based on what Max stated as the proportion of American's with Alzheimer's would be 1.66% base and an increased risk of 19.92% with apoE4 (that's based on 5mil of 300mil suffering from Alzheimer's).
I tried to search for some public health stated numbers on Alzheimer risk and couldn't come across anything definitive. All the figures I found were split out relating to age brackets, rather than generalised so stuck with Max's figures as an approximation.
Thank you for bringing on interesting guests and sharing different ideas/knowledge.with guests that are sharing health advice,and especially lifestyle...nutrition/exercise knowledge...I believe that those folks should back it up with some self evidence. Meaning that they can provide their own blood panels...In they metrics of what they preach. HDL/LDL/Triglyceride numbers etc. I understand that most of them are providing helpful advice, others are grifters for money and attention. My opinion..

You're missing a key ingredient in regards to the ketogenic diet. It is low carb and also sugar is replaced with monkfruit, erythritol, allulose etc. It's a combination of many ingredient replacements.

Biggest issue for my family is the cost of Whole Foods and the time it takes to prepare it in the way the kids will eat it. We both work so much that we need things to be as quick as possible to prepare and affordable. I have not found out how to make this happen for us in a sustainable way. I would love to solve that puzzle.

Our goal has always been to have only one working parent so we can focus on raising our children right. Every time we get closer to achieving that goal, another “crisis” seems to come along that makes my gains in earnings meaningless. My wife is continuously forced to go back to work because we just can’t afford to live otherwise. Believe me, the moment we can sustain basic needs with only me working, she will be home raising our children as planned. Wake me up when they stop spending or printing away our future. At this rate, it won’t matter how my kids turn out-they’ll be living at home indefinitely anyway. Idk what the solution is, but I work on finding one daily.
Soups. Potato soup. Pea soup. Broccoli soup. Just get a huge pot and make several kilos for two days for the entire family. Throw in some bacon or something and it can be really good and energizing food. The trick to a good soup is adding a lot of salt. The salt is healthy for you since the potassium from the potatoes perfectly balances it, salt is only bad for people if their balance is off. Salt also increases energy delivery and muscle performance and allows you to properly hydrate. It also preserves the soup so it can stay fresh several days in the refrigerator.

If you eat unprocessed, natural, whole plant foods, then you can eat until satiety because you'll naturally consume less calorie dense foods. The fatal flaw in ultra-processed and packaged foods is their calorie density.

Also, the diet is complex. What can one tolerate? My son-in-law cannot eat an Atkins bar or he is in the bathroom. I cannot eat vegetables they cause me inflammation. Spices take me to the bathroom. So you can think you’re eating a healthy diet but you’re not paying attention to how it makes you feel and what it is doing to your body. People don’t listen to their bodies anymore. I didn’t listen. Who could think that vegetables would cause inflammation? It wasn’t until I went on an elimination diet and then four months later try to eat the vegetables that I’m supposed to eat and I couldn’t walk that night because my joints hurt so bad and my hip which is a problem area was in massive pain. Pay attention to how you feel and what you are eating.

Ice cream made at home is the best. You can sweeten it with whatever you want (or not) and ensure you’re using quality heavy cream and eggs. If you don’t add any flavors you can make it special every time.
Sometimes I add high quality peanut butter and salt, sometimes I add fresh berries, you can make it whatever you want when you feel like. Plus, it has vitamins! 😂
You can also freeze bananas and blend them, add some cold cream and natural vanilla flavor or cacao powder and small chocolate pieces maybe even some amarena cherries . It's very good

The question of causality between depression and food is extremely clear. Ask any celiac like myself. You could look at my years long diet log that also contains notes on physical and mental well being and you'll quickly see that everytime my digestion works well and i suffer no noticeable deficiency then both physical performance and mental performance and mood improve drastically. I experienced deficiency in many different nutrients. I think the most important one to look at is potassium. If you have low potassium your sleep quality gets bad. Bad sleep directly causes depressive behavior and irritability and on top of that add memory loss and dehydration because you need potassium as an electrolyte. But ultra processed food rarely contains enough potassium. Rice, White Bread, Pasta.. not enough in it. You need a large amount every day. If you don't eat nuts and seeds and a hefty amount of whole grain and no potatoes then you'll definitely have a deficiency.
That gluten experiment might be true or false but I can tell you that it's not the reason for why people develop Gluten intolerance. I had issues for years and i didn't even know what Gluten was. Then eventually I found out i had celiac disease. When i find myself having digestive issues it often was a total surprise. Like Gluten in broccoli? Wtf i never expected it at first so when i had problems i searched for a long time until eventually I thought the only thing i hadn't checked was the frozen broccoli. Yes it said "contains traces of wheat". The actual reason people get it a lot today is because Gluten has rapidly increased in our diet. Wheat has been engineered to contain more Gluten. They use literally Gluten Flour. That's the name. They also no longer use sourdough but instead chemical accelerants. Sour dough in its days long process of resting removes nearly all Gluten down to a level of 200ppm. That's 1000x less than otherwise. Gluten always irritates the gut in all people so naturally after overexposure people develop an intolerance.

As always, loved the episode. Max is wonderful. I am curious his thoughts on pescatarians though. I was a vegetarian (very briefly vegan. Yikes) And started including fish in my diet about a year ago to try to get closer to the healthy ideal. Does he have data or information on that diet?
Pescatarianism is the happiest middle ground between vegetarians and omnivores imo. Key healthy nutrients like creatine, protein, b vitamins and healthy fatty acids are super important for muscle and brain health, just be mindful of increased mercury intake due to polluted waters, things like making sure your fish comes from good sources, or staying away from worse offenders like tuna/basa on ~3 days over 7 should stave this off in combination with a good exercise regime.
In combination with phytonutritents for plants and the overall low calorie density of the foods you would eat on the diet it's a great solution!

Dopamine!! That’s the drive toward ultra-processed high sugar foods. It’s a helluva drug. Maybe I missed one of you mentioning that along with dampening cortisol, but man, it’s harder for me to manage my sugar cravings and overconsumption than it was to quit heroin. Or maybe I just forget how hard that was seeing as how it was 13 years ago. Food is the final addiction (besides binge watching RUclips) that has me trapped.
Same here but I'm actually winning the sugar fight tonight. I have some cookies...I'm not going to eat them. I have ice cream...it can wait until tomorrow. I'm eating too much sugar and it's awful to have to manage it like a functioning addict...but it's better than crack. Or alcohol or even weed. It comes in waves and at least I don't really gain weight or have too much ill affects from it, I just don't like being not in control of it. It's too much similar to the bad things we've battled.

Keto is not done by trickery and carb counting... just do it by eating meats, cheese, butter and green veggies - simple works.
We go for pancake when we are in very low energy becoz I think it is cheaper, good quality meat are expensive. I think "rich rich" people who are depressed might not binge eating snacks or high carb and saturated fat, they might go for wine or whisky or some type, because their palates are different. We are poor people go for foods that have been known to us since we are kids which unfortunately are high carb and saturated fat.

And the reason I don’t like artificial sweeteners, especially for dessert replacement is the cephalic phase. That’s where the brain doesn’t know that it’s not real sugar it just taste sweet and sense a message to the pancreas to release insulin in anticipation of glucose that never comes. Now you have the fat storing hormone roaming around your body needlessly
Aspartame is problematic. Have read research study papers that put me off aspartame years ago.
But again the amount you'd have to consume to have health effects is stupidly high. It's like saying being in sunlight gives you cancer. You still need a prolonged exposure to it.
