late tip for removing the screw is to drill a smaller metalldrill into the srew thats stuck. use a drill around half the screw size. the just try to drill backwards. It works sometimes atleast for me not always tho.
You are doing a wonderful job. What you could try to blend the colour of the infills that you make for your doors, is soak them in a strong solution of black coffee or tea, let dry and try the linseed oil on a trial piece first. Heat the broken screw with a soldering iron. After it cools use pliers to unscrew.
