- Marinated Vegetable Salad
My low carb vegetable salad is different as it doesn't have lettuce in it. It's a great quick side dish. I have adjusted the ingredients to my liking but feel free to adjust to your personal taste.
10 pieces zucchini cut into 1" cubes
10 pieces cucumber cut into 1" cubes
1 small tomato cut into 8 bite size wedges
¼ sweet pepper cut into 1" squares
¼ cup cauliflower florets
¼ cup broccoli florets
1 stalk celery sliced
2 rings red onion cut into quarters
6 garlic stuffed olives
Basil or herb of your choice chopped
Small sprig parsley chopped
⅛ cup feta crumbled
Dressing:
¼ cup olive oil
1 TBSP allulose sweetener
3 TBSP red wine vinegar
2 TBSP white vinegar
Salt and pepper to taste
Directions:
Whisk dressing ingredients in a large bowl and adjust for salt and pepper.
Add chopped vegetables and toss to coat.
Rest in the fridge to chill and marinate for about an hour stirring every 15 minutes.
