I love chorizo and cheese so this is definitely going to be on the menu, but served with salad. Yummy 😋 I suppose if you have children who don’t like anything vaguely spicy, you could use normal sausage and/or smoked bacon instead.

Plating the dish is also an important technique because one enjoys one's food with one's eyes at least for a brief moment before eating. Now I am hungry.
That looks delicious and I can alter it to fit my Keto diet by using boiled turnip or radishes in place of the potato. I also have to use Mexican chorizo as Spanish isn't available here, but it will be glorious even with my tweaks. Thanks Rik!

I made a version last night. Roasted in the oven, minimal oil, no cheese 😢 and I added a red pepper and a small cabbage. Not the same, I know but it was very good and inspired by your recipe. Thank you so much!

If you can get ahold of it where you are, try Mexican chorizo. I find it much more flavorful than the Spanish.
