  • Making poached eggs at home is incredibly easy-no need for gimmicks like spinning water with vinegar or straining eggs through a sieve. These overcomplicated methods are just chef tricks to stand out. Today, I’ll show you how to make the perfect poached egg using a simple pan with a lid, a trivet, and a small pie tin or ramekins. Let’s bust the myths and create flawless poached eggs in just 4 minutes!
    Some may call these coddled eggs; however, using egg poachers at home - is the same process. Cooking and spinning in water can take the same amount of time and have no consistent result. This poached/coddled way guarantees perfect results every time.
    With this method you can cook many eggs at once not just swirling and twirling one egg!!

    This is great thank you, I used to do the twirling and swirling method and have a 50% success rate. So I have worked out you have saved me 100 eggs thanks again.

      I also have about a 50% success rate with the swirl method, and it’s always the second egg that is a flop. I’ve wondered about that…🤔

    I love that you have our backs Rik! I could watch 20 videos on the same method and still get it wrong! I also love that you listen to your community - a Lady asked about caramelising onions and despite giving a detailed description a few days later they were on the menu!       I was thinking about trying those, I'm just a bit wary because you probably wind up with a few million nano-plastic particles in every egg you make. And I know I'm already getting way more microplastics in my food than I need, so might as well try to reduce it wherever possible... not that it's really gonna matter in the end, since whatever cancer winds up killing me will almost certainly be related to microplastics. There's no way to avoid it, it's in literally everything we consume

    I was taught to make poached eggs (direct heat method) exactly this way & discovered the swirling in the water etc methods much later & always wondered why people wanted to complicate something that’s perfectly straightforward & easy to do! In fact we even had tiny stainless steel bowls (commonly used to serve Indian meals in a thali) that I buttered up to use as poached egg moulds.

    Nice simple instructions. I've used the silicon 'poachers' that you can floar in the past. I've cracked poachng direct in water now - helps to have really fresh eggs from our own chickens. I believe that eggs cooked in a vessel (rather than directly in water) are considered 'coddled' eggs. You end up with a very similar result so what's in a name.

    My mother had a tray that fit in the top of a 4 quart pan that held 6 small cup similar to Rik's but with a tab with a slot on the edge so they could be lifted out with a knife, and that was in the 60s so this is a 'revival' of an older method, one that I had forgot, thanks for the reminder.

    Nice 1, Rick. I have literally tried this with your second method an hour ago and worked perfectly with perfectly round white eggs and after buttering beforehand they literally fell out of the moulds. Tasted and looked superb, pan didn't even need washing and thanks for this great tip!

    Morning Rik from Sunny windy west Yorkshire. Did this today using my plastic steaming basket and three steel pudding tins, apart from knocking one over whilst putting another tin in, all worked well at 3 mins(my preference)

    Honestly... I've not had a poached egg in ages..!!! And I've literally just said to my Mrs.. what we gonna have for dinner, because we had a good lunch, so not too hungry... And now you know what I'm gonna have... We've got some nice bread (pão alentejano) we can toast up and a couple of poached eggs on top and maybe a sprinkle of grated cheese.!!!🤩

    One of the simple great meals in life is eggs and toast...dippy eggs and soldiers are my absolute favourite but those poached ones are little beauties Rikmeister! nice colour on the yolks too. Happy chickens! brilliant mate😋

    I've just had 2 boiled eggs with Marmite soldiers. I've never done Marmite soldiers before. It was a good combination no salt needed with the eggs.

    When I was little my mum had an aluminium pan which contained a base in which you simmered the water, frame which sat above that, with four holes, each of which had a little cup with a wire loop handle. The cups would be buttered, and the eggs put in as you did with your pots. A lid would then sit on top of that so the eggs would cook in the same way yours did. There were never any broken yolks or underdone eggs. It was a great little bit of kit. I don't know what happened to it after my parents died. I was told later that they were actually coddled eggs, as poching is done in liquid. Basically, I enjoy them done either way, and your way is easier. Thanks for the demo. it's another good post.       I found this one in a second hand store for a few dollars. I absolutely love it! Without top it's just a regular pot. So it's multifunctional. I notice it's made in Italy. Put that on your list if you ever go.

    I thought this was called coddled eggs, which I love and make often. I lived in Costa Rica for a while and learned to poach eggs in the black bean soup. They are just dropped in the bubbling broth and make a lovely satisfying meal Correct me if I'm wrong...I thought that poaching meant the egg was directly in the liquid. When I make them this way I usually add salt, pepper and some dried herbs. Very nice!

    I am lucky enough to have the old poaching pan with the four cups so very similar to the trivet method it might just be my favourite of cooking eggs. Smothered in a ton of white pepper both while cooking and once cooked and the obligatory toast, sometimes with a spoonful of baked beans. I too like it a little runny can spread a little across the whole of the toast that way :).

    Nice one Rik, having spent years attempting (& failing miserably) to perfectly poach eggs directly into water, I gave in & purchased a set of those silicone poached egg moulds. I know that strictly speaking the puritans will argue ‘these aren’t proper poached eggs but coddled eggs” 🙄, but who cares they look & taste like poached eggs to me.
    I wasted countless eggs over the years experimenting & discarding dozens of inedible stringy egg messes, & it’s a definite 👍 from me for the lidded pan & egg mould version. I did purchase one of those electrical egg boiler/poacher gadgets for my late husband to use following his stroke & rehabilitation, (he was left with a rare & unusual set of neurological problems, one of which was that he couldn’t discern temperature in his right hand - so was very susceptible to burning himself) it helped overcome his frustration at not being able to be more independent & so he could occasionally treat me to breakfast, it was certainly a big hit with him, & really helped raise his confidence in the kitchen, so would recommend for anyone in a similar situation or with frail, elderly family members.

      Yes the puritans who can't boil or poach an egg but will chime in about poached is submerged in fluid - however poached egg gadgets on the market, helping many, are not submerged. This is a guaranteed way every time. You know this channel - its about cooking and helping others cook - not swirling and twirling eggs with a less than 50% success rate. Thank You. Best, Rik

    Sorted ... 2 nice slices of hot, heavily buttered toast..🤣.. with a couple of poached eggs each.. in our pastel de nata tins they were about 4:30.. bloody lovely.!!🥰🥰🥰..not had em in ages, best dinner this last few months!!!     The way I do them is in the microwave. I put them in a shallow plastic container with a lid on. two eggs in separate containers. Cooked from 55 seconds to one minute. 900 watt microwave. your way Rik also looks good. 👍

    I used to have a pan like this. So easy and yes, they are perfect. No muss, no fuss! And no stringy bits. I don't even have to run the knife around, just pop out with a spoon.

    I use stainless steel cooking rings for one or two eggs...you get a really good shape and natural looking poached egg. Or if I'm cooking 4 eggs, I just poach them in water in a small frying pan...perfect eggs everytime....as each egg helps the other to hold shape. Personally I'd not put a lid on, as it overcooks the tops of the yolks. Anyway, love your channel!

    I wonder where the white vinegar idea came from? Yours is so much easier & demystified finally!

      Vinegar is acidic, and the acid helps the egg whites coagulate more quickly. This can make the whites firmer and more likely to hold their shape, especially if the egg is cracked directly into the water.
      In traditional poaching, vinegar helps reduce the "feathery" bits of egg whites from spreading out into the water. It is NOT needed at all in this method. Thank You. Best, Rik

    Im of an age where these are the proper poached eggs, and the other way where you crack n drop egg into boiling water is coddled eggs. Could be a northern thing 😂. I prefer proper poached like these 👌

    Nice one Rick. I actually like the more freeform poached egg and get it by placing the raw egg in a small glass, giving it 5 seconds in the microwave. This just slightly firms the white and retains a shape when dropping it into boiling water. It’s tender and moist.

    I bought an old-fashioned egg poacher in a charity shop. The plastic cups were not a success - didnt conduct the heat. I replaced the plastic with metal and voilà - perfect poached eggs every time! Size of egg (weight ) determines cooking time. About 60g works for us. Buttered wholewheat toast - fresh from the toaster! Yes!

      They are normally sold as a camping hob, not really supposed to be used inside unless very well ventilated. I’ve seen them on Amazon. I hope this helps, cheers

    I love my eggs with solid cooked whites and very runny yolk.
    The only way I can get that is with low heat in lots of lard splashed over the whites while cooking. No flipping.
    BUT poaching looks so much easier!
    I just tried it during the video with 3 min cooking time, and they are perfect!

    Hi Rik, I use egg rings that are used for frying eggs to poach mine, just make sure the water is about 1 to 2 cm above the ring. I also put vinegar in, not sure what it does except a bit of flavor or aroma, but that's how mum did it when I was a kid so I've stuck with it

    I used to have one of those egg poachers with four plastic cups suspended over a shallow pan of water. I grew up thinking that's what a poached egg was. But doing it properly does taste different, more like a lightly boiled egg but with no risk of runny white. Using a poacher is really low temperature frying. I think just about anyone can learn the conventional way, and get it right after a couple of tries.

    The method clearly works and I'll use it as I love poached eggs, but they look like Mcdonald poached eggs........so probably not suitable when the mother-in-law visits...........I always give her the old eggs anyway😂😂
