I put a large sheet of parchment paper or the shiny side of freezer paper down to roll my dough out on. I flour that surface, but I use the paper to help fold the dough onto itself.
I do not know why I haven't gotten cook books from my library. I do go there for other things. I have purchased many cook books from stores and online, but nothing worse than having a very expensive cook book, but only liking a few recipes out of it. This looks delicious 😋
