Solid recipe. I like how you presented the batter as baker’s percentages. I’m going to experiment with the addition of wheat dextrin to keep it crispy also. The only criticism I have is that the way you eat wings is like my 4 year old who hasn’t figured out the bone structure of a chicken wing part.

When you bite into it you make it look so tasty.... but please never compare Bonchon to Kyocheon.. those old Bonchon adjushi tents in Seoul in the old days.. could never hold a light to Kyocheon.. can you do the kyocheon garlic and soy sauce recipe please I miss it soo much!

Gochujang is normally spicy. I'm not too sure if there are more or less spicy versions of it. Never thought to look lol. A typical alternative sauce is the soy garlic. I didn't do it in this video, but you can certainly find it on Google. Make the sauce separately and brush it on as you normally would.
Ayeee Cafe Soho! I swear every Asians in Philly that knew about Korean fried chicken popped their cherries at Cafe Soho. Then we got Bonchon and now Bonchon reigns supreme over in Philly. I hear Cafe Soho is still good but the quality has dropped a bit. But their other food is still great.
Add 고춧가루 (gochugaru - Korean red pepper flakes). Same stuff that goes into kimchi and pretty much every spicy Korean dish. Start with a tsp and adjust accordingly.
I just don’t get how you comparing fried chicken and soul food fried chicken is not even on your list. I’m baffled. No chin fried chicken is really good but I definitely disagree you cannot have it without the sauce it is very bland and if you just eat the meat from the chicken without the outer layer it definitely tastes so bland😂 that sauce is 🔥 tho

Just curious, can we use any radish if our local and Asian grocery stores don’t have the Korean one? Or would that affect the taste?
Daikon radish is a good substitute. I've never tried using another radish, but why not try it? If you do, let me know how it is!

The radish is meant to be eaten pickled. So we are making radish pickles by using the brine.

Look up the recipe for dalk galbi (닭갈비). It's basically the same sauce and is exactly that: a spicy korean grilled bbq chicken.
