How To Make Almond Cream - A Simple and Delicious Recipe for Tarts and Pastries

  • Almond Cream is a versatile staple in the pastry kitchen. I'm going to show you the steps in preparing this simple and versatile recipe. It is made with equal parts of sugar, butter, almonds, and eggs with a bit of flour or cornstarch as well. It is used for a multitude of pastry and dessert applications such as croissants aux amandes and in making Crème Frangipane. It is also used to fill galette des rois, pithiviers and frangipane tarts.
    Note: Almond cream cannot be consumed raw. It is meant to be baked.

    Chef I love how you are so detailed.
    Nice tip that you don't need to add flour or cornstarch because the eggs will help set it.

    Looks so delicious. Is there anyway I can avoid egg and what can I use instead? I am surrounded with vegetarian and vegan people and I want to make almond croissant for them.

      Great question. Although I haven't made it there are versions where apple sauce is used to replace the eggs. Other versions use aquafaba (bean water). Either substitution will work but will provide a more delicate texture. Cheers!

    Thanks. Look so good but it’s raw. If I want to use this cream as a topping for pancake, etc, should I bake it or heat it on stove top ?

      Thanks so much. Almond cream is meant to be baked after as there's raw egg in the mixture. You can bake it in a tart shell with berries or pears. It's great in croissants and baked to make almond croissants. I have a video for that too!
