- Almond Cream is a versatile staple in the pastry kitchen. I'm going to show you the steps in preparing this simple and versatile recipe. It is made with equal parts of sugar, butter, almonds, and eggs with a bit of flour or cornstarch as well. It is used for a multitude of pastry and dessert applications such as croissants aux amandes and in making Crème Frangipane. It is also used to fill galette des rois, pithiviers and frangipane tarts.
Note: Almond cream cannot be consumed raw. It is meant to be baked.

250g almonds

Looks so delicious. Is there anyway I can avoid egg and what can I use instead? I am surrounded with vegetarian and vegan people and I want to make almond croissant for them.
Great question. Although I haven't made it there are versions where apple sauce is used to replace the eggs. Other versions use aquafaba (bean water). Either substitution will work but will provide a more delicate texture. Cheers!

Hi Tiffany, I had the same question. I thought about baking the cream in a water bath like a custard to use it like a filling for cake or store bought croissant. Maybe it would work?
