How to master the Almond Cream | Pastry 101 Detailed tips &tricks

    Almond Cream is a basic component in so many tarts. I know it’s more like a batter rather than a cream as it’s something that you need to bake. I’ve seen many people getting it wrong!
    Here are some examples of tarts that used almond cream.
    Blueberry Tart
    • The Best Blueberry Tar...
    Raspberry Tart
    • The Best Raspberry Tar...
    ▶Almond Cream◀
    *All the ingredients need to be at room temp (20℃)
    Butter (room temp) 100g
    Powdered Sugar 100g
    Almond Powder 100g
    Eggs (room temp) 95g
    Rum 5ml
    ① Lightly beat the butter.
    ② Sift in the powdered sugar & almond powder. (In the video the caption says almond powder, but I sifted in both powdered sugar & almond powder together!) Mix well but don’t beat it vigorously.
    ③ Gradually add the eggs (Do not add all the eggs at once. Split it over 5~6 steps) while beating it.
    ④ Finally add in the rum and mix.
    ⑤ Leave it to rest in the fridge. Always use the almond cream the day after you make it.
    How to store: In the batter state (before baking) you can store in fridge up to a week. Obviously, after baking it you need to assemble the tart!

    Hello Chef! I’ve followed you right from the beginning. I knew you’d do great. Your recipes and instructions are the more professional here. I’ve made quite a few. I often bake a pear and almond tart. The recipe I have from my school uses cake flour. My question is, what’s the criteria to use flour versus cornstarch or like in your case no thickening at all?     I've been testing recipes and learning more on my focus for pastries.
    I've been curious, could you allow the almond cream to set for a few hours prior to use for a tart, or does it have to sit over night?

      you don't usually use vanilla for almond cream but I guess you can!

      For Almond cream it's better to use Almond Extract a few drops.

    I have a question: What exactly is meant by “almond powder”? Are these finely grated (full-fat) blanched almonds? Or de-oiled or partially de-oiled almond flour (in german: "Mandelmehl")?

    I think I made this on accident or an similar way lol I went to go make almond butter outta my blender and I added to much water and came out like a pancake batter but doesn’t cook like a pancake so thank you for this

    Wow... I just tried, by adding to my strawberry tart using your recipe.
    However, i cant taste the rum or even smell it😂 I wonder is it because of the brand as Im using Bacardi Gold Rum🤔🤔🤔
    So, chef, can i add more rum in this recipe and how many? Besides, any recommended brand for rum?

      yeah you're not meant to feel the rum. it's there to remove any eggy smell.

      oh just take out 5g of almond powder and put in cornstarch instead.

      I think you can use either flour or meal. I used flour and it turned out well.
