What about Brooks' masterpiece "The Producers" (1968). The original, not the musical remake.
"The Producers" was the only movie that earned Brooks an Oscar. It's sheer comic genius.
This list requires him to actually appear in the movies (actor, starring role) 😉 but you're right, it's a great one!

When I first watched Young Frankenstein in the background I noticed a clock striking. Being a Mel Brooks movie I counted the chimes and was delighted to hear 13 chimes.

Twelve chairs is my all time favorite movie. I have a DVD of the film and watch it whenever I need a laugh
