There are many Japanese foods that have equivalents in the cooking I grew up with in South Mississippi, but I have never found an analogue to okonomiyaki! It surprises me, because we have cabbage, we have pork belly, and shrimp, and all manner of other good things that people put in okonomiyaki, and we certainly have all kinds of tasty fritters. But the magical combination of cabbage and pancake and fillings just never happened for us. Thank you for sharing your talents and recipes with us. I hope your channel grows!

Have made a few now and have never really left for too long before cooking, or even cook immediately. If you are hungry and do not want to wait you can easily get away with cooking immediately. There are also softer cabbage varieties too that quickly. End result tastes very much the same.

I made okonomiyaki for the first time in 2022 after enjoying it many times during 14 visits to Japan. My city, Ottawa Canada, has many chinese/asian/japanese grocery stores, so I can buy Japanese ingredients like chinese yam, QP mayo, bonito flakes, dashi soup base, etc. I watched this video to learn if I could make okonomiyaki without yam, because it's inconvenient to go downtown just to buy one thing. I already learned that I could omit the egg, because my wife cannot eat eggs. The okonomiyaki still comes out perfectly. I make my own QP mayo and bbq sauce from raw ingredients. My homemade okonomiyaki is as good as almost any I have had in Japan, and better than any that I have had in North American japanese izakaya-style restaurants. It's so easy to make great okonomiyaki at home.

I wonder if the instant pancake mix might work for this recipe? Where's my lab coat?
Actually, I tried it with pancake batter. Pancake batter expands more than regular flour/egg batter. 1/2 cup pancake batter to 1/3 cup of chicken broth. Turned out very tasty and easy!
