- Okonomiyaki is a Japanese savoury pancake containing a variety of ingredients. The name is derived from the word okonomi, meaning "how you like" or "what you like", and yaki meaning "grill" (cf. yakitori and yakisoba). Okonomiyaki is mainly associated with the Kansai or Hiroshima areas of Japan, but is widely available throughout the country. Toppings and batters tend to vary according to region. Tokyo okonomiyaki is usually smaller than a Hiroshima or Kansai okonomiyaki. (Wikipedia)
Kansai- or Osaka-style okonomiyaki is the predominant version of the dish, found throughout most of Japan. The batter is made of flour, grated nagaimo (a type of yam), water or dashi, eggs and shredded cabbage, and usually contains other ingredients such as green onion, meat (generally thin pork belly, often mistaken for bacon), octopus, squid, shrimp, vegetables, konjac, mochi or cheese. Okonomiyaki is sometimes compared to an omelette or a pancake and may be referred to as a "Japanese pizza" or "Osaka soul food".[1]
Some okonomiyaki restaurants are grill-it-yourself establishments, where the server produces a bowl of raw ingredients that the customer mixes and grills at tables fitted with teppan, or special hotplates. They may also have a diner-style counter where the cook prepares the dish in front of the customers.
In Osaka (the largest city in the Kansai region), where this dish is said to have originated, okonomiyaki is prepared much like a pancake. The batter and other ingredients are pan-fried on both sides on either a teppan or a pan using metal spatulas that are later used to slice the dish when it has finished cooking. Cooked okonomiyaki is topped with ingredients that include otafuku/okonomiyaki sauce (similar to Worcestershire sauce but thicker and sweeter), aonori (seaweed flakes), katsuobushi (bonito flakes), Japanese mayonnaise, and pickled ginger (beni shoga). A great recipe which I love. I have this at the Japanese Pavillion at our Heritage Days international cultural event in Edmonton. I have been going there every summer, for several years now. This is one of the first things I get. It comes with a combo platter. They have food, music, artwork and dancing, from many countries from around the world. I also see the Japanese drummers at this event. It is a lot of fun. Thanks for sharing another great recipe Chef Hiro.

Just found this okonomiyaki (however you like) in a search. Nice take on the dish. I am familiar with the Nagasaki style and think this one presents better. Hiro is such a personable guy, I can watch for hours.

Ive had so much okonomiyaki here in Osaka. Its already starting to come out of my ears
Loved Hiro-san's youtube stuff for years. Especially clean knife work. I trained as a chef in Japan, too. Nishiwaki city. Anyway, we use nagaimo or yamaimo in the batter also. Ika....mmmmm. If you dont have those, Hiro-san's way here is perfect. Raw egg yolk on top with katsuobushi, sarashinegi....kewpie.....benishouga... omg. Ha!
I've been home-making and tweaking okonomi-yaki for over 20 years, and I agree that yamaimo is a must. The batter is just there to keep the ingredients together, and should not "bake" up like a cake or donut, and the finished product should be a consistency that makes you think that it's undercooked.
Also, using an actual rich dashi broth will add flavor and liquid to keep the consistency moist.
That said, it still tastes great even with a heavy flour-based batter, but if you can get yamaimo, it's really sublime.

I make this at home all the time, one of the things that is AMAZING in it is chopped pickled ginger. its one of the few things i've found that lets you cook with pickled ginger.

Hey Hiro great video. I love making Okonomiyaki, I usually fry my bacon then add my okonomiyaki batter over my bacon.
I should remember the aonori and hedashi from the Asian supermarket that I'd ventured in today. The okominyaki will be a different dinner for me from now on.
