My understanding is that you change the pitch of the drum by shortening and lengthening the distance between where you strike the drum and the placement of your hand on the drum. So if your hand is in the center of the skin, and you strike the center of the skin, it will be a higher pitch, but if your hand is on the outside of the skin and you strike the center of the skin, the pitch will be lower.
