Same! I went to this place with “tempura rolls” but they basically just put in frozen shrimp and breadcrumbs that weren’t even cooked and I just couldn’t…i had to spit it out. My hometown is by the sea so maybe I just got used to “fresher” ingredients or to bread crumbs actually getting cooked but I have a feeling this chef would’ve had the guts to swallow it. Actually 7-11 food isnt considered bad in Japan, so it is a valid test. Although 7-11 in Japan and the US/rest of the world isnt the same, at all. They actually prepare good food and they use good quality ingredients in Japan. However this was also a video showing a chef eating cheap sushi, so 7-11 is still an option on that table.

He does not have to be very mean to the cheap sushi, because people know that cheap sushi can't hold up at all to the real thing. Who knew. Must be limited to certain stores. I sure wouldn't buy it from a drug store. I will only eat sushi from select sushi restaurants. I even avoid sushi from Chinese / Thai restaurants where it is sort of a throw-in. There are too many risks connected with consuming raw seafood, and it's not worth the risk eating sushi from any source other than a properly trained chef working in a place with reaonably high turnover.

I have had expensive Sushi and cheap sushi, and while the sushi and the nice Japanese or Asian-fusion places are real good, there are some excellent cheap places, they tend to be small chains or independent stores and not the mega-conglomerates. (there is a local chain near me, and they are not that pricey and are really good for their price). I also agree with him, the rice needs a more vinegary flavor, which is how I do when I make it at home and also not to mush the rice. The better places don't mush the rice, but most don't have enough rice-wine vinegar in the sushi. Also Kudos for having a professional of his craft and not a pretentious snob who claims to be an expert

I go to Japan every 2 years for 2 weeks and when restaurant hunting I learned that 3 out of 5 stars is high praise from Japanese people.

Actually 7-11 food isnt considered bad in Japan, so it is a valid test. Although 7-11 in Japan and the US/rest of the world isnt the same, at all. They actually prepare good food and they use good quality ingredients in Japan.
However this was also a video showing a chef eating cheap sushi, so 7-11 is still an option on that table.

That's because frozen isn't necessarily bad. Many places actually utilize frozen fish, it just depends on how you freeze the fish that makes the difference. It is typical for the top sushi places to use fish that is flash frozen. It evens out the temperature, kills parasites, and retains it's freshness. What the chef in the video is probably talking about is the nasty kind of frozen fish, the kind you see at cheap stores where the fish probably has freezer burn if anything.

Frank McGrath it depends on how well it was frozen. Just like any meat you freeze, it has to be frozen quickly or it will lose a lot of moisture and flavor when it thaws.

Who knew. Must be limited to certain stores. I sure wouldn't buy it from a drug store. I will only eat sushi from select sushi restaurants. I even avoid sushi from Chinese / Thai restaurants where it is sort of a throw-in. There are too many risks connected with consuming raw seafood, and it's not worth the risk eating sushi from any source other than a properly trained chef working in a place with reaonably high turnover.
Maggnify ive seen it often but just something about buying sushi from a walgreens in chicago in the hood is uncomfortable to me rather get mines from whole food

At my local smith’s marketplace (Utah name of Kroger) the sushi chef there is a sushi chef that came all the way from Japan. He is very nice and he makes the best sushi you will ever eat. He makes better sushi than all sushi restaurants in the city

I have had expensive Sushi and cheap sushi, and while the sushi and the nice Japanese or Asian-fusion places are real good, there are some excellent cheap places, they tend to be small chains or independent stores and not the mega-conglomerates. (there is a local chain near me, and they are not that pricey and are really good for their price).
I also agree with him, the rice needs a more vinegary flavor, which is how I do when I make it at home and also not to mush the rice. The better places don't mush the rice, but most don't have enough rice-wine vinegar in the sushi.
Also Kudos for having a professional of his craft and not a pretentious snob who claims to be an expert
