That's actually good writing when I look back on it. I was scared to press that option though. But it makes perfect sense that it would be a joke.
great thing i learned about this game, often times dialog options that in other games would trigger a battle or hostility against you, in this game (if it makes sense) it often leads to a more funny and unhinged conversation instead of your usual "good npc" dialog. My first playthrough i was too scared to try these options but in my 2nd i found out it is way more fun that way.

That's one thing I wish BG3 did that I've seen in other RPGs, which is to give more nuanced replies of something that's essentially the same response. For example, this scene could have had "I might get a better offer. [Joke]" and "I might get a better offer. [Serious]", and Shadowheart's response will actually change depending on which one you pick.
Likewise, it could also affect other things like Alignment or companion/deity reactions where you pick something like "Sure, I will kill the beggar for you. [Lie]" and "Sure, I will kill the beggar for you. [Truth]"

How do you get this dialog? Is it after the swimming scene?
Yes. Once you enter the Lower City proper and long rest, Shadowheart will talk about her future with you. It may take a couple of long rests if you have a lot of events stacked up in your "queue" (that's why I long rest a ton so I don't miss anything!)
Great, except I'm already in the lower city and didn't get the swimming scene due to a bug
@mad_sn4ck31 It's a known bug, unfortunately... you could try to load back to an early Act 3 save or wait until Larian fixes it. Sadly, her Act 3 romance scene doesn't trigger for a lot of people. Sucks too... because it's the best in the game (in my very biased opinion).
I was worried that cause I did the house of grief early it blocked it from triggering but I wrote to larian and confirmed it was a bug. I don't care too much about the scene but I want my character to have the ending with her
Btw do you know if the scene is required for the Shadowheart ending? I want to play the game and not wait for a bugfix

No, shadowhearts is definitely obtainable via figaro, I think the mc one is probably also obtained there but it looks definitely base game

I used it for my Shadowheart too
