Needed hamburger buns, saw your video, decided to have a go at it. The dough was actually lovely to work with. I used my bosch to knead the dough and just left it in the bowl without shaping to let it rise. I did the same for the second rise. No sticky fingers at all and no additional flour. The buns have just the right amount of chew and the crumb is the perfect strength and texture for burgers. Just a bit of spring to the crumb after sliced. No soggy buns. Love this recipe and will now keep it as my main burger bun recipe. For anyone frustrated by working with a wet dough, after you shape the dough balls the first time be sure to turn/pinch from the outside in and stop when the dough becomes sticky again. The "skin" keeps the dough from sticking to your fingers if you are careful and do it this way. Thanks for a wonderful recipe!

The main problem that I have with dough is that I can't get it to stick to itself. It's like that "skin" keeps it from sticking together. Even when I oil the outside surface before it rests. Though, I haven't made these specific buns. Just my experience with pizza dough and dinner rolls.
@@Gutslinger hi! I am not sure about your exact method so please forgive me if I misunderstand. It sounds like you are trying to shape your dough after covering it with oil. For pizza, make your dough balls your desired size and shape. Then brush them with oil while they are rising. When it is time to make your pizza you should not be reshaping the dough. Simply work from the middle of the risen dough ball, flattening and stretching to the desired size. Do not flatten the out edge. Try to leave the air bubbles intact around the edge. That is how you can easoly achieve those big air pockets around the edge/crust of a pizza. For buns I would either lightly spray the top of the bulk dough or just put it in a container with a lid to prevent drying out. Then either spray the work surface with a minuscule amount of oil to prevent sticking while dividing or use the tiniest bit of flour. If you have trouble, set the piece of dough to be shaped on your work surface and begin folding the edges to the center until the outer cloak begins to develop. You will find the dough easier to handle that way. Finish the dough ball by doing the roll/pull method. Oil does indeed create a potential problem when trying to pinch dough edges together. The amount required to prevent sticking is shockingly small. Seriously, you can sprinkle 3 or 4 drops of olive on your counter and spread it across the surface and it is like magic. Good luck. I hope you are able to find success. Walking into a room filled with the aroma of fresh bread baking in the oven is divine.
I stumbled across this recipe yesterday and tried it today. Even though the steps were lengthy the results spoke for themselves, brilliant. When the kids came home from school and saw the buns on the wire rack they thought they were bought ones. When I told them I made them they were in awe :) This is an amazing recipe. I've been making these for a couple of months now and I love them! Here's a tip if you are looking to use a stand mixer instead of hand kneading. I use Brian Lagerstrom's technique for bread dough of after the initial mix of half the flour mixed on med/low till blended and then the addition of the second half of the flour, I've been doing 4 minutes on med speed and then 6 minutes on high speed. Works perfectly. I also use Brian's technique of doing the rise and folding in a plastic container with an oiled lib.

Hi, thanks for this recipe! I use olive oil in all my recipes, when baked, nobody can say there's olive oil. Neutral oil when extracted heated is unhealthy: molecular changes Cis-trans. Cold pressed olive oil very good and can be cooked. And instead of butter too (allergy to dairy). It means changing the recipe a bit, but it's worth trying. I'll try your recipe asap. As I have a zero waste kitchen, I'll put a humid towel on the bowl. And I wouldn't use aluminium in the kitchen, aluminium is toxic. Stainless steel is OK. All the best!

This recipe is amazing! I have made these probably 4-5 times already:)! I even make double batches and then put them in the deep freezer hehehe. I've made them with all sorts of toppings and I prefer to use a stronger egg wash for the tops because it makes them shinier but the dough is wonderful!

So i tried the recipe and let me tell you. The buns came out spectacularly. Just make sure you gently press the sesame seeds on the buns so they dont easily run off while handling. I must say lots of time and elbow grease went into making the dough (no machine used) but it was worth it at the end. Thank you sir for sharing. Greetings from the Netherlands 🌷

This recipe needs to be patient and careful while manipulating the dough. I tried it once, result was amazing and good taste. I just found that they were quite "rich". Can't we go for a mix with 12% protein floor and a lighter one for getting closer to the original buns ? (which seem really more papery and less delicious...)

There’s a difference between approaching food only to consume it, and establishing your own relationship to the food you make. I’ve learned how to make a very good pizza sauce and dough on my own, and along with the good flavors that I control, there’s also the satisfaction that... I. Made. This. Or I could go to the grocery store and buy a frozen pizza for $5 and just pop it in the oven.

Hi, I would like to know if you can remove the club buns from the rings - let´s say at 10 minutes baking time - to brown them a bit more outside for another 5 minutes. The problem with baking in forms is, it will not have a good color outside compared to browning on top. Cheers from Germany, Bernd

Hi Chief Estilette, When it comes to seasoning meat I keep it simple. Coarse Sea Salt and Freshly Ground Black Pepper. I season the burger meat with only salt on the grill and then hit it with freshly ground black pepper as it comes off the grill as not to burn the black pepper. I'd love to taste one of your handcrafted hamburgers. 🍔🌶🧀😋🥰
A good burger starts w your meat blend. Start w ground chuck which has that good "burger" taste and chew and introduce ground meats you enjoy....brisket, beef short rib, etc. Salt & pepper should be all you really need for seasonings, let the meat speak for itself.

Needed hamburger buns, saw your video, decided to have a go at it. The dough was actually lovely to work with. I used my bosch to knead the dough and just left it in the bowl without shaping to let it rise. I did the same for the second rise. No sticky fingers at all and no additional flour.
The buns have just the right amount of chew and the crumb is the perfect strength and texture for burgers. Just a bit of spring to the crumb after sliced. No soggy buns. Love this recipe and will now keep it as my main burger bun recipe.
For anyone frustrated by working with a wet dough, after you shape the dough balls the first time be sure to turn/pinch from the outside in and stop when the dough becomes sticky again. The "skin" keeps the dough from sticking to your fingers if you are careful and do it this way.

The main problem that I have with dough is that I can't get it to stick to itself. It's like that "skin" keeps it from sticking together. Even when I oil the outside surface before it rests.
Though, I haven't made these specific buns. Just my experience with pizza dough and dinner rolls.
@@Gutslinger hi! I am not sure about your exact method so please forgive me if I misunderstand. It sounds like you are trying to shape your dough after covering it with oil. For pizza, make your dough balls your desired size and shape. Then brush them with oil while they are rising. When it is time to make your pizza you should not be reshaping the dough. Simply work from the middle of the risen dough ball, flattening and stretching to the desired size. Do not flatten the out edge. Try to leave the air bubbles intact around the edge. That is how you can easoly achieve those big air pockets around the edge/crust of a pizza.
For buns I would either lightly spray the top of the bulk dough or just put it in a container with a lid to prevent drying out. Then either spray the work surface with a minuscule amount of oil to prevent sticking while dividing or use the tiniest bit of flour. If you have trouble, set the piece of dough to be shaped on your work surface and begin folding the edges to the center until the outer cloak begins to develop. You will find the dough easier to handle that way. Finish the dough ball by doing the roll/pull method.
Oil does indeed create a potential problem when trying to pinch dough edges together. The amount required to prevent sticking is shockingly small. Seriously, you can sprinkle 3 or 4 drops of olive on your counter and spread it across the surface and it is like magic.

I stumbled across this recipe yesterday and tried it today. Even though the steps were lengthy the results spoke for themselves, brilliant. When the kids came home from school and saw the buns on the wire rack they thought they were bought ones. When I told them I made them they were in awe :) This is an amazing recipe. I've been making these for a couple of months now and I love them! Here's a tip if you are looking to use a stand mixer instead of hand kneading. I use Brian Lagerstrom's technique for bread dough of after the initial mix of half the flour mixed on med/low till blended and then the addition of the second half of the flour, I've been doing 4 minutes on med speed and then 6 minutes on high speed. Works perfectly. I also use Brian's technique of doing the rise and folding in a plastic container with an oiled lib.

I use olive oil in all my recipes, when baked, nobody can say there's olive oil. Neutral oil when extracted heated is unhealthy: molecular changes Cis-trans. Cold pressed olive oil very good and can be cooked.
And instead of butter too (allergy to dairy). It means changing the recipe a bit, but it's worth trying.
I'll try your recipe asap. As I have a zero waste kitchen, I'll put a humid towel on the bowl.
And I wouldn't use aluminium in the kitchen, aluminium is toxic. Stainless steel is OK.

This recipe is amazing! I have made these probably 4-5 times already:)! I even make double batches and then put them in the deep freezer hehehe. I've made them with all sorts of toppings and I prefer to use a stronger egg wash for the tops because it makes them shinier but the dough is wonderful!

So i tried the recipe and let me tell you. The buns came out spectacularly. Just make sure you gently press the sesame seeds on the buns so they dont easily run off while handling. I must say lots of time and elbow grease went into making the dough (no machine used) but it was worth it at the end. Thank you sir for sharing. Greetings from the Netherlands 🌷

This recipe needs to be patient and careful while manipulating the dough. I tried it once, result was amazing and good taste. I just found that they were quite "rich". Can't we go for a mix with 12% protein floor and a lighter one for getting closer to the original buns ? (which seem really more papery and less delicious...)

My husband will only each homemade meals. I have tried multiple bun recipes. Tomorrow is your turn. Looks delicious😍. Im gping to make this tonight. I will freeze some of the raw dough and cooked buns to test as well. Will write back to let you know if it freezes well to.

Hi, I would like to know if you can remove the club buns from the rings - let´s say at 10 minutes baking time - to brown them a bit more outside for another 5 minutes. The problem with baking in forms is, it will not have a good color outside compared to browning on top.

Hi Chief Estilette, When it comes to seasoning meat I keep it simple. Coarse Sea Salt and Freshly Ground Black Pepper. I season the burger meat with only salt on the grill and then hit it with freshly ground black pepper as it comes off the grill as not to burn the black pepper. I'd love to taste one of your handcrafted hamburgers. 🍔🌶🧀😋🥰
A good burger starts w your meat blend. Start w ground chuck which has that good "burger" taste and chew and introduce ground meats you enjoy....brisket, beef short rib, etc.
Salt & pepper should be all you really need for seasonings, let the meat speak for itself.
