I understand how you see the grain direction from the outside before cooking, but how do you see that when you slice it? I just see it going from down to up in an angle 🤷
A better explainer on what that joint is would be useful, there are all sorts of regionalisation of meat cuts names and pronunciation. Trying to figure out in the butchers with a queue of people behind you would be awkward.
