OMG I am so excited for this video. I recreated cute studio ghibli foods from movies such as Spirited Away, Princess Mononoke, Castle in the Sky, Arrietty, and The Boy and the Heron. INGREDIENTS & NOTES
#1 Spirited Away: Onigiri 0:57
1 cup sushi rice (220g)
1 ¾ cup water (430ml)
generous pinch of salt
for the filling:
1 cup edamame ~155g (no shell, frozen)
enough water to cover and defrost
1 tbsp vg mayonnaise
2 tsp soy sauce
sesame seeds, sriracha, soy sauce for serving
→ yields around 6 onigiri depending on size
#2 Arrietty: Thumbprint Cookies 4:25
1/2 cup unsalted butter, softened (110g)
1 1/3 cup flour (160g)
2 tbsp cornstarch
1/2 cup peanut butter (120g)
2/3 cup sugar (133g)
2 1/2 tbsp applesauce
1 tsp vanilla paste (or extract)
1/2 tsp baking powder
1/4 tsp salt
a few tbsp jam of choice (I used strawberry)

*yields 2-3 sheets of cookies (24-36 cookies)
#3 Arrietty: Creamy Veggie Soup 7:20
150g - 200g white mushrooms (oz)
1 white onion
2-3 cloves garlic
1-2 tbsp olive oil
1 handful cashews
1 splash white wine
1 vegetable broth cube
1000ml - 1250ml (4-5 cups) water, divided (more if needed)
optional: white food coloring lol
salt, pepper to taste (plus more spices if u wish)
2 handfuls frozen carrot slices
2 handfuls raw broccoli florets
optional: squeeze fresh lemon juice to taste, 1 tsp miso paste to taste
serve with sourdough bread
→ serves 2
#4 Princess Mononoke: Rice Porridge 9:33
1 cup sushi rice (220g)
3-5 cups (750ml - 1250ml) water (start with 3, add more as needed)
¼ tsp salt, or to taste
1 sheet nori, ripped to bits
1-2 tsp miso paste, or to taste
optional: vegan egg mix (1 tbsp chickpea flour + ¼ cup non dairy milk + 1 tsp white wine vinegar)
for serving:
fresh basil, pre-fried tofu, spring onion, drizzle of soy sauce
→ serves 3
#5 Castle in the Sky: Egg on Toast 12:00
40g glutinous rice flour/regular rice flour (¼ cup + 1 tbsp)
60ml vegan cream, cuisine or milk (¼ cup)
60ml soy yogurt, unsweetened (¼ cup)
pinch of salt
1 tsp rice or white wine vinegar
a pinch of kala namak for serving
1 tbsp oil for the pan
3 - 5 yellow/orange cherry tomato tops
→ yields 3-5 vegan sunny side up eggs

#6 Boy and the Heron: Homemade Jam 15:25
450g frozen strawberries (3 cups)
110g sugar (1/2 cup + 1 tbsp)
1 1/2 tbsp lemon juice (or juice of 1/2 lemon)
1/2 tsp lemon zest
a few drops vanilla aroma (or 1 tsp vanilla extract)
*yields enough jam for one 180ml - 250ml jar (6 fl oz - 8.5 fl oz)

A Japanese vegan here. About Ashitaka's costume... He was a member of Emishi, the ethnic group that existed in the current Tohoku area until the Heian Era (they were against the central government of Japan at the time and conquered in the end). In the movie, as a fictional story, Hayao Miyazaki made Emishi which was supposed to be diminished still exist in the Muromachi era, but in a hidden way. The costume is fictional, but it is an amalgam of Ainu design and Chinese design. Even though Emishi and Ainu are different people, but kanji of them is same (蝦夷) , both lived and lives in north of Japan, and both are and were target of elimination of Japanese central government. The reason you can see Chinese influence is that at least Ainu people traded things with China actively, I guess. What is interesting about Emishi is that they called "the children of wolves" to represent the savageness of them in the historical record.
Princess Mononoke represents interestingly well Miyazaki's view of Japanese history (including environmental one) well. My most favorite Ghibli movie.

I think the soup in the ghibli movie is a Japanese cream stew. It's actually made with flour and butter. If you're interested, I recommend the video by Japanese Cooking 101. The soup is super easy to veganize and tastes amazing! Instead of chicken, just use the seitan chunks from Fitgreenmind's NO CHICKEN recipe. 🥰
I thought it was chicken soup, it looked just like chicken! but this sounds good too!
My grandmother used to make thumbprint cookies. It's actually a good starter cookie for kids to make since they're so simple. My grandmother's recipe was plain butter cookies, with the center being a piece of guava paste melted in the center.
It is very common in the Caribbean alongside the usual sugar cookies. You see them a lot in school functions.

If interested, Arrietty is based on The Borrowers books by Mary Norton. There was a movie adaptation of it in the late 90's staring a few of the actors that have since been in Harry Potter.
I LOVED the borrowers the 97 film as a child, so it took me forever to watch arriety the ghibli film and was so surprised when the plot was entirely different hahaha

I watched Damsel on Netflix Friday night. I really liked it. I’m so glad you said that you didn’t understand the plot for The Boy and the Heron. I didn’t either!! I felt so dumb like, “what wrong with me? I’ve always been able to connect with Ghibli movies.” But I guess I need to give it another go. I really appreciate that you do everything plant based. My family and are vegan and huge Ghibli fans so this really helps me when my kids want a special Ghibli meal.👍

Das Video erinnert mich daran, dass ich unbedingt mal wieder Ghibli-Filme schauen sollte - insbesondere Prinzessin Mononoke ... hab' ich das erste mal vor ca. 14 Jahren gesehen und war sooo begeistert davon. Ein Wechselbad der Gefühle; definitiv intensiv.

Last film I saw coincidentally was with aforementioned friend and we saw Imaginary. Subtitled or original 日本語 with no subtitles, since the early 1980s. Dubs are atrocious. Doesn't help you learn the language nor see how horridly the so-called "translators" may have actually been bowdlerizing the source material if you can't hear the original language.
I absolutely love these kinds of videos! We have been to Japan several times and my husband and I fell in love with their culture and cuisine. Thanks to your work, I am going back to this beautiful country, at least for a while.
