Nice. Liked the use of bacon fat to cook the hash browns as well as give it flavor. Never tried cooking it this way using a baking pan, but looks easy and simple.

That is a nice way to cook breakfast and I have never done it before and have to try it. The bacon, eggs, and hash browns turned out perfectly just as though they was cooked on the stove top.

I saw online somewhere that if you place the bacon in a cold oven set at 400 that the bacon won't curl and cooks better. Tried it- works great and crispier bacon! (try it!) I like 375 too.
Have you added an air fryer to your arsenal? I love my small cheap one, its a terrific companion with the instant pot. Today i did sliced mushrooms inthe air fryer 400° for 10 minutes. Great, not slimy or wet but intense mushroom flavor. Great to add to food. And dont even think about the deliciousness of FROZEN pearl onion with rosemary and sweet balsamic vinegar. 400° 23 or 24 minutes. The flavor will have dude over the moon.

This made my mouth water but also on the negative, heart attack waiting to happen with all that bacon grease. I always cook my bacon between multiple paper towels in the microwave so the grease is soaked up. I love the potato hash browns with the eggs. I must try that.

Btw, how come the hash browns don’t stick to the pan? Is it because of the leftover bacon oil? I worry the potatoes would stick to the bottom of the pan. But yours came out so crisp and clean!!!! I gotta get some potatoes and hash brown to try this out

Two of the eggs are for Halloween right they look orange to me.
looks great. what different eggs did you use? I saw 2 that had a more orange yolk than the rest.
The yellow ones were the organic ones from Costco. The orange ones were free range from a different batch of eggs.

Question....can you rinse the potatoes to remove the starch (I’d spin them dry in the salad spinner) or do they cook better with the starch? Great video 👍
What a great idea! I have not tried but definitely a great way to remove the moisture.
You could, just make sure they are really dry, or the liquid would "boil" the potatoes and not let them crisp up.
Kathy Bruner I would just put them in a kitchen towel and squeeze out the moisture. I’ve not tried it, but I would think the starch would help make them crispy.

Potatoes came out mushy & not browned enough - wd make bacon first , remove, then put in potatoes in bacon fat, & flip to get really browned & crispy , then make holes to put in eggs & bacon at the end ( we like bacon & hash browns really crispy) & wd skip the onions & garlic ( they added too much liquid to the potatoes)😊
Breakfast is the best. This is making me sad that I’m about to have cereal ☹️

Have you ever used Silpat or silicone mat on top? Is it the same as parchment paper in decreasing crispness?
I have a Silpat mat and it is only supposed to be used on delicate cookies that you don’t want to burn on the bottom so I’m going to assume that it will also prevent things from crisping up well.

I make it a lot, but I try to make some other stuff, no sous vide tho, only instant pot and air fryer, please introduce an air fryer into the vids, also, I love your hair, just saying. Congrats on the book, I'll go grab one.
